How to make a delicious pie from a simple dough, even if you don’t have a mold: galette recipe

If you have fruit and enthusiasm, but you don’t want to spend a long time in the kitchen, we are ready to offer you a suitable recipe. The galette is not just a dry and crispy biscuit. This is the name of a very simple (and very tasty) open pie.

You don’t need a baking dish and you can experiment with the filling: try persimmons, plums, thinly sliced ​​apples or even tomatoes. Our version uses spelled flour – try adding oatmeal, rye, corn or buckwheat instead.

Ingredients for making cookies

For the test:

  • premium wheat flour – 150g;
  • spelled flour – 100 g;
  • boiling water – 100 ml;
  • refined vegetable oil – 100 ml;
  • salt – a pinch;
  • parchment paper for the crust.

For the filling:

  • plums – 10-15 medium-sized pieces;
  • butter – 20 g;
  • brown sugar – 1 tbsp. L. (take twice as much if the fruit is acidic);
  • potato starch – 1 tbsp.

If you prepare the filling from tomatoes, instead of sugar and starch, sprinkle them with dried herbs and salt and brush the crust with a mixture of mustard and sour cream.

How to cook the pancake:

1. Mix flour and salt in a large bowl. Make a hole in the middle and pour 100 ml of boiling water into it, then 100 ml of oil.

2. Knead from the middle to the edges (it is convenient to start with a spoon) to form a firm but soft dough. Roll it into a ball, put it in a bag and hide it in the refrigerator for 1 hour.

3. About 10 minutes before the end of this period, prepare the filling: cut the fruit into slices, melt the butter.

4. Take out the dough, place it on parchment paper, sprinkle lightly with flour and roll it out into the thinnest oval possible. Stepping back 3 to 4 cm from the edge, sprinkle the cake with starch and lightly overlap the fruit slices. Close the edges in any convenient way – with a braid, if you know how, or just on top of the trim.

5. Gently brush the fruit with melted butter and sprinkle with sugar. Cook the pancake for around 45 minutes at 200°C – it should be nicely browned.
