Basic ingredients for Caesar salad:
– 1/2 bunch of iceberg lettuce, washed and roughly chopped. (or romaine lettuce)
– salt to taste (pinch) to season the leaves
Caesar sauce ingredients:
– 1 canned anchovy fillet, chopped.
– 1 small clove of garlic, grated
– 1/2 tablespoon(s) lemon (juice), a little more if you want to adjust the flavor (or lemon)
– 2 and 1/2 tablespoons of extra virgin olive oil, added little by little
– 2 teaspoons of mayonnaise (optional)
– 1 teaspoon Dijon mustard (or mustard)
– 1 unit of egg, only the yolk; replace with pasteurized egg yolk for greater safety)
– 1 tablespoon(s) of grated parmesan.

– pepper to taste
Tuna ingredients:
– 1/2 can(s) solid canned tuna, drained
– 1/4 lemon (juice)
– 1 teaspoon(s) of extra virgin olive oil, or as required.
– thyme to taste or other fresh or dried herb of your choice (optional)

Crostini ingredients:
– 2 slice(s) of sliced ​​bread, cut into cubes
– olive oil to taste
– salt to taste (pinch)
– dried herbs to taste (optional)
Ingredients TO ACCOMPANY:
– Parmesan to taste, grated
PREPARATION:
- Set aside everything you need for the recipe.
- Clean the iceberg or romaine lettuce: wash it well under running water and leave it to soak in a sodium hypochlorite solution while you follow the recipe,
- Prepare the tuna: open the can, drain and season the tuna with lemon juice, olive oil, salt, pepper and thyme leaves or another aromatic herb of your choice. Book.
- Prepare the croutons: remove the crust from the bread (optional) and cut it into cubes.
- Grate the parmesan.
- Clean the lemon before cutting it.
- Separate the oil and egg yolks for the sauce.
- Note on using raw egg yolks: Use fresh or pasteurized egg yolks for added safety, especially if the salad will be consumed by children, the elderly or pregnant women.
PREPARATION:
Caesar Salad – Croutons:
- If the sliced ​​bread has a crust, remove the crust (optional) and cut it into 1 to 1.5 cm cubes.
- Season the bread cubes with a pinch of salt, dried aromatic herbs (optional) and a drizzle of olive oil. Mix well.
- Grease a pan with olive oil and heat it lightly over low heat.
- Add the bread cubes and brown it on all sides, stirring to prevent it from burning.
- Remove and place on paper towels to drain. Book.
Caesar Sauce:
- In a bowl, mix the chopped anchovy fillet, the egg yolks, the grated garlic clove and the lemon juice. Season with salt and pepper.
- Beat with a wire whisk until an emulsion forms.
- Continue whisking, gradually adding the extra virgin olive oil, until a creamy sauce forms.
- Stir in the mayonnaise (optional) and Dijon mustard.
- If necessary, adjust the seasoning with more lemon, salt or pepper.
- Keep the sauce cold and consume within 30 minutes of preparation.
Tuna Caesar Salad:
- Rinse the lettuce leaves and dry them well with a salad spinner.
- If the leaves are very large, tear them in half with your hands.
- Place the sanitized and dried lettuce leaves in a bowl.
- Season the leaves with a pinch of salt and mix them delicately with half of the prepared sauce.
FINALIZATION AND ASSEMBLY:
- Transfer the seasoned leaves to a plate or divide among individual plates.
- Arrange the seasoned tuna on the leaves.
- Drizzle with the rest of the sauce.
- Spread over the croutons.
- Serve to tuna Caesar salad immediately and finish, if you like, with grated parmesan.
