The combination of sweet and sour with the citrus touch of the fruit makes the dish an explosion of flavours. The tender one is golden, juicy and has a particular flavor that goes perfectly with Christmas side dishes.
The preparation methods are easy to do at home and the dish is ready in about 1h40. Furthermore, the mandarin sauce can be prepared in advance, ensuring more convenience when serving.

Tender with mandarin sauce
Time: 1h40

Ingredients:
- 1 tender (ball)
- Salt to taste
- 2 tablespoons butter
- 1 clove of minced garlic
- Cloves to taste
- Butter for greasing
- 2 cups mandarin juice
- 1 tablespoon brown sugar
- 1 tablespoon corn starch
- Skinless tangerine segments and mint leaves to decorate
Preparation method:
- Cut the tender meat superficially into a diamond shape and season it with salt, butter and mixed garlic, insert the cloves onto the meat and place it in a greased pan.
- Drizzle with half the tangerine juice mixed with brown sugar, cover with aluminum foil and bake in a medium preheated oven for 30 minutes.
- Remove the paper and bake for a further 15 minutes or until cooked through and golden. Remove the fillet and place it on a plate.
- Pour the liquid from the mold into a pan, add the remaining tangerine juice and cornstarch and heat over low heat, stirring well until it thickens.
- Drizzle the tender meat and decorate with mandarin segments and mint to serve.
