Caponata cake

Time: 1 hour

Ingredients:

  • 1/2 cup (tea) olive oil
  • 2 eggs
  • 1 cup (tea) wheat flour
  • 1/2 cup (tea) wholemeal flour
  • 1 cup (tea) skimmed milk
  • 1 teaspoon of chemical yeast
  • Margarine and wheat flour for greasing

Filling:

  • 1 small diced aubergine
  • 1/2 diced red pepper
  • 1 onion chopped
  • 1/2 cup (tea) olive oil
  • 1/3 cup vinegar (tea).
  • Salt, black pepper and chopped parsley to taste
  • 1/2 cup chopped walnuts

Preparation method:

  1. For the filling, mix all the ingredients in a mould.
  2. Cover with aluminum foil and place in a high, preheated oven for 15 minutes. Remove and let cool.
  3. For the dough, blend the ingredients in a blender.
  4. Place 1 tablespoon of dough and 2 tablespoons of filling in the greased and floured cake pans, press lightly with a spoon and fill with the dough, without overfilling.
  5. Place on a baking tray and bake in a preheated medium oven for 25 minutes or until golden brown.
  6. Leave to cool, unmold and serve.
