Ingredients:

  • 2 cloves of garlic
  • 1 glass of dry white wine
  • 1 cup (tea) water
  • Salt to taste
  • 1 chest (approximately 2.5 kg)
  • 300 g of spring onions
  • Laurel branches to decorate
  • Egg strings, fresh cherries and pineapple in syrup to decorate

Filling:

  • 4 tablespoons butter
  • 1/2 yellow pepper cut into strips
  • 1/2 striped red pepper
  • 1 onion cut into strips
  • 1 glass of sliced ​​hearts of palm (300 g)
  • 1 can drained corn
  • Salt and chopped green chilli to taste
  • 2 tablespoons cream cheese
  • 200 g of diced provolone

Preparation method:

  1. In a blender, blend the onion, garlic, wine, water and salt.
  2. Place it over the chester in a large bowl and leave to rest for 2 hours, turning it halfway through cooking.
  3. For the filling, heat a pan with butter and brown the peppers and onion for 2 minutes.
  4. Add the hearts of palm, corn, salt and green chilies and sauté for another 2 minutes.
  5. Turn off the heat, let cool and mix the ricotta and provola.
  6. Remove the chester from the marinade and fill it with the reserved filling.
  7. Place in a mold, pour over the marinade liquid, cover with aluminum foil and place in a preheated medium oven for 1 hour and 20 minutes.
  8. Remove the paper, arrange the spring onions and bay leaves around the chester and return to the oven for a further 40 minutes or until golden brown.
  9. Transfer the chester to a serving dish with the spring onions around it and decorate with egg strands, cherries and pineapple in syrup and serve.
