Ice cream with panettone

Time: 25min (+6h freezer)

Performance: 8 servings

Difficulty: easy

Ingredients:

  • 1 liter of fresh cream
  • 2 cans of condensed milk
  • 3 tablespoons of rum
  • 2 cups chopped panettone
  • 1/2 cup cherries (cut in half)
  • 1 cup chopped walnuts

Syrup

  • 2 cups sugar (tea)
  • 1/2 cup (tea) water
  • 1 tablespoon cold butter
  • 5 tablespoons of fresh cream

Preparation method:

Using a mixer, beat the cream until thick. Before turning it into whipped cream, add the condensed milk and beat some more. Turn off the mixer and add the rum. Pour into a bowl and place in the freezer for 1 hour.

In a non-stick pan, over medium heat, quickly toast the panettone. Remove the ice cream and mix in the cold panettone, cherry and walnuts. Place in a large mold with a hole in the center and place in the freezer for another 5 hours.

For the syrup, in a saucepan, heat the sugar mixed with water over medium heat until caramelized. Mix the butter and cream. Wait for it to come to the boil again, stirring with a hand whisk.

Unmold the ice cream by running hot water over the bottom of the mold and placing it on a serving plate. Cover with caramel and serve immediately.

Panettone cake

Time: 1 hour

Performance: 12 units

Ingredients:

  • 3 eggs (whites and yolks separated)
  • 2 cups sugar (tea)
  • 2/3 cup room temperature margarine
  • 1 cup milk (tea)
  • 2 1/2 cups (tea) wheat flour
  • 1/2 cup chopped Brazil nuts
  • 1/2 cup candied fruit
  • 1 tablespoon of chemical yeast
  • 1 tablespoon panettone essence
  • Chopped chestnuts and candied fruit to decorate

Coverage

  • 1 cup (tea) powdered sugar
  • 3 tablespoons water (approximately)

Preparation method:

Using a mixer, beat the egg whites and set aside. In another bowl, again with the help of a mixer, beat the egg yolks, sugar and margarine for 3 minutes. Add the milk, mixed with the flour, beating until you obtain a homogeneous mixture. Add nuts, fruit, yeast, essence and beat for another 1 minute.

Add the egg whites and mix gently with a spatula. Pour into cupcake molds lined with paper liners until it reaches 2/3 of the capacity, and arrange in a large mold, one next to the other. Bake in a preheated medium oven (180°C) for 25 minutes or until cooked through and lightly browned.

Remove and let cool. For the topping, mix the sugar and water to form a paste. If necessary, add more water. Distribute on the cupcakes, decorate with nuts and fruit and serve.

Panettone biscuit

Time: 40min (+1h in the fridge)

Performance: 8 servings

Ingredients:

  • 1 cup butter (tea).
  • 1 egg
  • 1 teaspoon of panettone essence
  • 4 tablespoons of sugar
  • 2 cups (tea) of wheat flour
  • 1/2 cup milk chocolate chips
  • 1/2 cup candied fruit

Preparation method:

In a bowl, mix the butter, egg, essence, sugar and flour until a moist dough forms. Divide it into two parts, mix the chocolate chips in one and the fruit in the other half. Wrap in cling film and refrigerate for 1 hour. Remove the dough and roll it out with a rolling pin until it is thin.

Cut into Christmas-patterned molds, transfer to a large pan, side by side, and bake in a preheated medium oven for 10 minutes or until lightly browned. Leave to cool and serve.

Panettone brigadeiro

Time: 1 hour

Performance: 30 units

Difficulty: easy

Ingredients:

  • 2 cans of condensed milk
  • 4 tablespoons butter
  • 6 tablespoons of chocolate powder
  • Butter for greasing
  • 1 chopped mini panettone

Decoration

  • Red and green chocolate beads as desired
  • 200g white fondant
  • 1 teaspoon edible gold powder
  • 1/2 teaspoon grain alcohol

Preparation method:

For the brigadeiro, place the condensed milk, butter and chocolate powder in a pan and heat over medium heat, stirring, until it thickens and comes away from the bottom of the pan. Transfer to a plate and leave to cool.

Roll out portions of dough with greased hands and place a small piece of panettone in the center. Close and roll up forming brigadeiros. Pass through the chocolate beads, arrange in the molds and set aside.

Roll out the sugar paste with a rolling pin, cut it into a star shape with a pastry cutter and set it aside. Mix gold dust with grain alcohol and paint stars on both sides. Wait for it to dry and stick the star in the brigadeiros. Serve.

Panettone and fruit pavé

Time: 40min (+4h in the fridge)

Performance: 8 servings

Difficulty: easy

Ingredients:

  • 1 chopped panettone (500 g)
  • 2 cups chopped mango
  • 2 cups chopped strawberries
  • 1 cup blackberry jelly

vanilla cream

  • 2 cans of condensed milk
  • 2 cups milk (tea)
  • 2 tablespoons cornstarch
  • 2 egg yolks
  • 1 teaspoon vanilla essence

Preparation method:

For the vanilla cream, place all the ingredients in a pan and heat over medium heat, stirring constantly, until it thickens. Turn off and let cool. To assemble, in a medium baking dish, create layers of chopped panettone, vanilla cream, chopped fruit and gelatin. Repeat the layers until the ingredients are used up, ending with the fruit and jelly. Store in the refrigerator for 4 hours. Serve then.
