SPRAYED BISCUITS Ingredients:

– 1 cup(s) of acidic tapioca starch

– 1/3 cup(s) of oil

– 1/3 cup(s) milk (or water)

– 1/3 cup(s) of water

– 1/2 teaspoon(s) of salt

– 1 teaspoon(s) of sugar

– 1/2 unit of egg

– cold water to taste – just enough to knead the dough

PREPARATION:

  1. If you prefer to make lactose-free tapioca starch biscuits, replace the milk with water. The milk biscuit becomes softer.
  2. Separate the utensils and ingredients for the recipe.
  3. Beat the eggs in a bowl and measure the amount needed for the quantity you are preparing.

PREPARATION:

Tapioca biscuit – Dough:

  1. In a pan, heat the milk, oil, water, salt and sugar until it starts to boil.
  2. Pour the boiling mixture over the acidic cassava starch in a bowl and mix well until the cassava starch absorbs the liquid.
  3. Allow the mixture to cool until lukewarm.
  4. When it is lukewarm, add the beaten egg(s) and mix well until you obtain a smooth and homogeneous mixture.
  5. Add the cold water, a spoonful at a time, mixing with your hands until you obtain a firm but still slightly soft dough.

Tapioca Cookie – Try:

  1. Place the dough in a piping bag with a plain tip (or in a plastic bag cut at the tip).
  2. Shape a biscuit on the silicone mold, forming a tube approximately 7 cm long.
  3. Preheat the Airfryer to 200ºC and bake for 10 minutes to test the consistency.
  4. The time may vary depending on the power of your fryer, which is why testing is necessary.
  5. If necessary, adjust the dough with small quantities of milk or starch to improve cooking.
  6. Repeat this process as needed to ensure the cookies are cooked through.

Tapioca biscuits – Cook in the Airfryer:

  1. Using a piping bag or a plastic bag, shape the tubes of pasta according to your preference and place them in the silicone mold, keeping a space of 1 cm between them.
  2. Cook in the preheated fryer at 200ºC for about 10 minutes, or until the biscuits are firm and lightly golden. Attention: cooking time may vary depending on the quantity of biscuits and the capacity of the fryer.
  3. Important: Do not open the Airfryer during cooking to prevent the biscuits from deflating.

FINALIZATION AND ASSEMBLY:

  1. Remove the cassava biscuit(s). from the fryer and let cool completely before serving.
  2. Serve on a decorative plate or basket for a more attractive presentation.
  3. Store them in airtight containers.
