Healthy Ingredients for Gluten-Free Zucchini Pancake:
– 1 unit of courgettes
– 1 unit of eggs
– 1 cup(s) gluten-free oatmeal (or rice flour)
– 1/2 teaspoon(s) of chemical yeast B
– salt to taste
– pepper to taste B
Ingredients FOR GREATING:
– oil to taste
PREPARATION:
- With this recipe you will obtain 5 units of wheat-free courgette fritters (each 2 portions), approximately 10 cm in diameter.
- Separate all the ingredients and utensils needed for preparation.
- Wash the courgette(s) and grate the coarse part of them to ensure a good consistency to the mixture.
PREPARATION:
Healthy Zucchini Pancakes – Dough Preparation:
- In a bowl, beat the egg(s) until the egg white and yolk are well combined.
- Add the grated courgette(s) and mix.
- Add the rice or oat flour (make sure it is gluten-free) and mix until you obtain a smooth dough.
- Add the chemical yeast, salt and pepper to taste.
Wheat-free/gluten-free courgette pancakes – cooking:
- Heat a non-stick pan over medium heat and grease it with a drizzle of oil, spreading it with absorbent paper.
- Place a portion of the dough in the center of the pan and gently roll it out to form a disc approximately 10 cm in diameter and of medium thickness.
- Cover the pan and cook the pancake for about 2.5 minutes or until the bottom is golden brown.
- Flip the pancake, cover again and cook the other side for another 2.5 minutes or until golden brown.
- Remove the pancake from the pan and repeat the operation with the rest of the dough.
FINALIZATION AND ASSEMBLY:
- Serve wheat/gluten free zucchini pancakes as an accompaniment to your main course or with a fresh salad.
- Tip: These pancakes can be served with a light sauce, such as drizzled yogurt, for an extra pop of flavor.
