Banana Bread – American Banana Cake with gluten-free oats (healthy): soft like the original




Traditional banana bread, American banana cake – adapted into a gluten-free version, made with oat flour and almonds. Ideal for breakfast or a healthy snack

DRY Ingredients – Banana Bread with Gluten Free Oats:

– 3 cups gluten-free oatmeal

– 1/2 cup(s) corn starch (or sweet cassava starch)

– 1 cup(s) of almond flour

– 1 teaspoon(s) of sodium bicarbonate THE

– 4 teaspoons of chemical yeast THE

– 2 teaspoons of ground cinnamon THE

– 1 teaspoon(s) of salt

– 1/2 teaspoon(s) of xanthan gum

Liquid ingredients – Banana bread / American banana cake with oats

– 4 units of eggs (separated whites and yolks – recommended)

– 2/3 cup(s) honey (or maple syrup)

– 80 g unsalted butter, melted

– 4 tablespoons of oil

– 2 teaspoons of vanilla essence

– 1/2 cup(s) of natural yogurt

– 8 pieces of silver bananas, peeled and mashed

PREPARATION:

  1. Preheat the oven to 180°C.
  2. In this recipe we do not recommend substituting ingredients (only where indicated), as changes can alter the final result, altering its consistency and moisture.
  3. For 1 entire recipe (02 portions), grease a baking tray (23×13 cm) with oil and line with baking paper. If necessary, also grease the paper.
  4. On a plate, mash the bananas with a fork until they form a puree.
  5. Separate the egg whites, leave them in the bowl of the food processor or place them in the bowl of the food processor. This step guarantees an even softer cake, but the cake can also be made with whole eggs.
  6. Separate the dry ingredients into a bowl: sift together the oat flour, cornstarch or sweet cassava starch, almond flour, salt, baking powder, baking soda, xanthan gum and cinnamon in powder.
  7. Melt the butter in a non-metallic bowl in the microwave for a few seconds.

PREPARATION:

Gluten/wheat free Banana Bread: dough preparation:

  1. In another bowl, mix the egg yolks (or whole eggs) with the honey or maple syrup, melted butter and oil. Mix until smooth.
  2. Add the yogurt and vanilla essence, stirring until well combined.
  3. Add the mashed bananas to the liquid mixture and mix until smooth.
  4. Add the mixture of dry ingredients to the liquid ones, mixing gently until a smooth mixture is formed.
  5. Whip the egg whites until stiff and set aside (optional, but recommended for a lighter result) and add them delicately to the mixture, mixing from bottom to top so as not to lose volume.

Gluten/wheat free banana bread – COOKING:

  1. Place the dough into the prepared pan.
  2. Sprinkle almond slices on top (optional).
  3. Bake in a preheated oven at 180°C for about 30-40 minutes, until a toothpick inserted into the center comes out clean.
  4. If the cake darkens too quickly, cover with aluminum foil to prevent the almonds from toasting too much and continue cooking. This procedure can be done, if necessary, after the cake has been in the oven for 20-25 minutes, so that it does not deflate.
  5. Remove from the oven, turn off and leave to cool completely in the pan.

FINALIZATION AND ASSEMBLY:

  1. Serve the American gluten-free banana cake for breakfast or as a snack.
  2. Store the banana bread in an airtight container in the refrigerator for up to 3 days.
