A refreshing salad (starter) with rocket, carrots, orange and avocado – ideal for a light and nutritious meal

Ingredients Arugula salad with carrots, orange and avocado

– 2 orange units, cut into segments

– mini rocket to taste (leaves)

– 1 carrot(s), cut into strips

– 2 avocados, cut into half moons

– lemon to taste (drops)

Orange sauce ingredients

– 1 unit of orange (juice)

– 2 tablespoons lemon (juice)

– salt to taste

– pepper to taste B

– 3 tablespoons of extra virgin olive oil

Ingredients for decorating

– smoked paprika to taste

PREPARATION:

  1. Separate the recipe ingredients and utensils.
  2. Clean the orange, peel it, removing all the white peel, cut it in half lengthwise and remove the segments.
  3. Wash the mini rocket leaves and immerse them in a sodium hypochlorite solution. Then dry them with a salad spinner or with absorbent paper.
  4. Wash the carrot, peel it and cut it into thin strips using a potato peeler or a mandolin.
  5. Cut the avocado in half, remove the stone and peel. Cut it into half-moons of about 0.5 cm and sprinkle it with lemon juice to prevent it from blackening.

PREPARATION:

Orange sauce:

  1. Mix the orange juice and lemon juice in a bowl.
  2. Add salt and pepper to taste.
  3. Gradually add the olive oil, whisking with a fork or wire whisk until the sauce emulsifies.
  4. Book.

Arugula salad with carrots, orange and avocado:

  1. In a large bowl, mix the mini arugula, carrot strips, orange segments and avocado crescents.
  2. Serve the salad on a serving platter or divide it directly onto plates.
  3. Drizzle with the orange sauce and sprinkle the smoked paprika on top.

FINALIZATION AND ASSEMBLY:

  1. Serve to rocket salad with carrots, orange and avocado on a large plate or divide directly onto individual plates.
  2. Add the sauce just before serving to keep the ingredients fresh.
  3. Drizzle generously with the orange sauce, making sure all the ingredients are well covered.
  4. Sprinkle smoked paprika on top to add a pop of color and flavor.
  5. If you have leftovers, store the salad without dressing in an airtight container in the refrigerator for up to a day.
