Ingredients for gluten-free spring rolls:
– 1/2 cup(s) of rice flour
– 2 tablespoons of corn starch (or potato starch)
– 1/4 cup(s) sweet cassava starch
– 1/2 teaspoon(s) of xanthan gum
– salt to taste (pinch)
– 1 tablespoon(s) of oil
– 180ml water (adjust if necessary to get the point)

- Separate all ingredients and utensils.
- The yield of this recipe is approximately 2 sandwiches per person for 20 cm diameter pancakes.

How to prepare gluten-free and wheat-free dough for spring rolls:
- In a bowl, mix the rice flour, cornstarch (or potato starch), sweet cassava starch, xanthan gum and a pinch of salt.
- Add water gradually, mixing well. The mixture should be homogeneous and fluid, but not too liquid. If necessary, adjust the consistency with a little more water.
- Then mix 1 tablespoon of vegetable oil into the dough. This will help give it elasticity, making it easier to handle and less likely to break.
- Pass the mixture through a sieve to remove any lumps, making sure that the mixture is homogeneous.
Making wheat/gluten free spring roll pancakes:
- Heat a non-stick pan over low heat.
- Remove from the heat and, using a brush, distribute small portions of the mixture into the pan, lightly covering the bottom. The dough must be very thin, but of uniform thickness to avoid fragile areas.
- Return to low heat and cook for 2 to 3 minutes until the top is dry and the edges are starting to pull away from the pan slightly. Do not turn the dough. Remove and place on a baking tray lined with baking paper.
- Place a piece of baking paper on each pancake and stack.
- Repeat the previous steps until the dough is used up.
- To ensure the dough retains its flexibility, allow the dough discs to cool completely (for about 10 minutes) before you begin assembling.
Assemble the spring roll::
- Make sure the filling is dry and cold before adding it to the dough.
- Fold and roll the rolls:
- Place a portion of the filling on one side of each dough disc.
- Lightly wet the edges of the dough with water (using your fingers or a brush) to ensure the roll sticks.
- Fold the sides of the dough over the filling to cover the sides.
- Start rolling the roll tightly from the side where the filling is, closing it completely.
- Place the assembled sandwiches in the freezer for 10 to 15 minutes or in the refrigerator for 1 hour—this helps firm up the sandwiches, ensuring they hold their shape during the baking process.
Preparation and tips for cooking (in the oven):
- Preheat the oven to 180°C.
- Brush or spray the rolls with vegetable oil and place them on the non-stick baking tray(s) lined with baking paper, without overlapping them.
- Bake for about 30 minutes, rotating the pan halfway through cooking to ensure they are evenly browned and crispy.
- If necessary, increase the oven temperature to 200°C and brown them for another 5-10 minutes so that the rolls finish browning.
FINALIZATION AND ASSEMBLY:
- Remove wheat/gluten free spring rolls out of the oven as soon as they are crispy and golden.
- Serve hot accompanied by pepper sauce or another sauce of your choice, such as sweet and sour sauce.
