Ingredients to assemble:

– 50 g of Parmesan or enough
– 200 g of Cagliata (without starch) or enough (or cottage)

Pre-repair:
- Separate the tools and ingredients for the recipe.
- Choose one or more refractory in size compatible with the number of portions you are preparing, so that the layers of lasagna overlap, cover the entire bottom and that you can create 4 layers.
- This recipe starts from a sauce that does not undergo previous cooking and since the eggplant slices have already been grilled, the oven time can be shorter, enough for the reduction of the sauce and the gratin lasagna. Therefore, regulates the amount of sauce so as not to be exaggerated and not left after the time of the oven.
- Cut the aubergines into thin slices: it is easier to use a saw knife and put them on a table and a slut “that is located”, making the parallel cut to the table.
PREPARATION:
Eggplant:
- In a large pan, heat the olive oil over medium heat
- Add slices of aubergine (a little at a time without overlap).
- Sprinkle with a drizzle of olive oil, season with salt and pepper to taste and grill for 2-3 minutes on each side.
- Remove from the heat and set aside.
Tempered tomato (without cooking):
- In a bowl, put the cubed naked tomatoes with the juice.
- Then add olive oil, salt and pepper.

Eggplant lasagna (assembly):
- Preheated the oven at 180 ° C.
- In the pan (i) spread a thin layer of seasoned tomato sauce on the bottom.

Eggplant lasagna: cook
- Take to bake in a 180OC preheated oven for 15 minutes or until the cheese is dissolved and free of charge.
- Remove from the oven and let it rest for a few minutes before serving.
Finishing and assembly:
- Serve the Eggplant lasagna Hot, in refractory.
- Divide into portions on the plates and decorates with basil or parsley (leaves).
- Accompany with more Parmesan to taste if you wish.
