Winter awakens our desire for warm and comforting dishes. Therefore, soups and broths have seen the leaders of meals. Nutritional professor of the University of Guarulhos (UNG), Vanessa Lopes, underlines that these recipes are excellent alternative to ensure a balanced diet at the lowest temperatures.
According to the expert, one of the main advantages is that soups help to maintain vegetables consumption during the winter. “It is common for people to reduce the intake of vegetables on cold days, but the soups provide a tasty way to include them in the diet. Carrots, Manioc and sweet potatoes, for example, are rich in vitamin A, essential for the immune system,” he explains.
Moderate excess calories
Vanessa Lopes suggests attention to the composition of the recipes so that they do not become excessively caloric. “Avoid the exaggerated use of ingredients such as sour cream, corn flour or flour, giving preference to a balanced combination of proteins, vegetables and leaves. Escarola, cabbage and even zucchini can be excellent options to enrich the soup”, recommends the nutritionist.
Already broths, such as pumpkin, manoc or leek, usually composed of one or two ingredients, must be consumed as an entrance, not as a main meal. “Usually they do not have all the food groups. So it is important to complete them with a protein and a salad to guarantee a complete meal,” underlines the teacher. Take a look at two delicious soup recipes:
Asian soup with chicken, curry and ginger
Ingredients:
– 1 chopped chicken breast
– 1 tablespoon of butter
– a drizzle of olive oil
– 2 cloves of sliced garlic
– 2 ½ cm of grated ginger
– 400 ml of coconut milk
– 300 g of sliced shitake mushrooms
-300 g of pair of Paris in slices
– 1/2 lemon juice
– Curry to taste
Preparation:
Fry the chicken in butter and olive oil with curry and garlic. So put the mushrooms and brown for ten minutes. Put coconut milk, lemon and ginger. Bring to a boil and serve hot.
Carrot soup
Ingredients:
– 4 average carrots
– 4 cups of water
– 2 cloves of garlic
– 1/2 onion
– 1 piece of ginger
– 1 tablespoon
– Green smell or parsley
– Go up to taste
Preparation:
Climb onion and garlic. Add chopped sliced carrots, salt to taste and ginger. When the carrot is soft, turn off the heat and beat everything in a blender. Bring the broth back to the pan, add the butter and mix. Finally, put the green smell or parsley.
