- Wash and dry the basil. Separate the stems for the tomato sauce and set aside the flyers on paper towels for finishing.
PREPARATION:
Eggplant meatball – Mass (do this step before starting the preparation):
- Wash the aubergines, peel and cut into cubes.
- Sanit, peeling and cutting the onion and garlic. Wash, dry and cut the parsley and chives.
- In a pan, fry the onion and garlic in olive oil until golden brown.
- Add the eggplant cubes and water (see quantity in the ingredients) and brown for 3 minutes.
- Condish with sweet paprika, salt and pepper.
- Lower the heat and cook until the aubergine is soft and all the water has evaporated.

Eggplant meatball – Mass (continuation)
- When the aubergine is ready, distributed in a pan and leaves to cool.
Homemade tomato sauce: (do this step during pre-performance):
- In a pan (where then you can put the boiled pasta) fry the garlic and onion in olive oil.
- Add the basil stems and chopped finger pepper and brown for 1 minute.
- Add the naked tomatoes with the juice.
- Add salt and pepper.
- When it boils, lower the heat to the medium and cook for about 10-15 minutes.
Egg without eggs (fusilli):
- When the water boils, add salt and fusilli.
- Cook according to the packaging instructions.
Vegetarian aubergine meatballs:
- When the aubergine is hot, insert a processor and grinds quickly – or if you prefer a very thin cut on a tablet with a knife.
- Put the aubergines in a bowl and add the oats, rice flour, parsley and chives.
- Mix very well until you get a homogeneous mass that allows you to model your hands – if necessary, add a little more rice flour.
- Rectify the spices (salt, pepper and paprika).
Eggplant and fried aubergine meatballs:
- Place your hands with a little olive oil and, using a spoon, take portions of the dough and roll in the shape of the ball.
- Depending on the amount of meatballs. Fry the first wave while modeling the second balls and so on
- In a pan or a deep pan, heat the oil – 2 high fingers – do not let it become too hot so as not to burn the flour.
- Put the breadcrumbs on a deep dish.
- Pass the balls in the breadcrumbs.
- Put them in the hot oil and fry, turning until the entire surface is golden.
- Place on a pair of auxiliaries on paper towels to absorb fat.
Fusilli with meatballs and tomato sauce at home:
- When the dough is for the tooth, drain.
- Once the sauce is ready, remove the basil stems.
- Put the meatballs inside the spicy sauce and mix carefully.
- Add the pasta in the sauce pan with the meatballs, mix well.
Finishing and assembly:
- Put the dough with aubergine meatballs on a plate or debt on the plates, preferably backgrounds.
- Ends with basil flyers.
🔁 Extra suggestions:
- Reuse the sauce! The homemade tomato sauce of this recipe is also combined with gnocchi, lasagna and even creamy polenta. See other recipes with tomato sauce.
- Versatile meatballs: you can serve aubergine meatballs as a snack, with separate sauce or as a filling of vegetarian sandwich.
- Presented with charm: serve in rear dishes and end with fresh basil parmesan and plant (or traditional, if you prefer).
