Mixed on toast

- 2 tablespoons butter
- 1 tablespoon of oil
- 6 eggs
- Salt to taste
- 2 tablespoons chopped fresh herbs
- 2 cups diced ham
- 1 pack of cream (200 g)
- Fresh herbs for sprinkling
- Toast to accompany
Preparation method:
Heat a large pan with the butter and oil over a medium heat and fry the eggs seasoned with salt, stirring well until set. Add the herbs and ham and cook for another 2 minutes. Add the cream, season with salt, mix and turn off the heat. Transfer to a plate, sprinkle with fresh herbs and serve with toast.
Hot sandwich with mortadella

- 2 tablespoons butter
- 1 egg

- 3 slices of mortadella

- 2 tablespoons mayonnaise
Preparation method:
In a non-stick pan, melt the butter over medium heat and fry the egg, stirring until the yolk becomes hard. Season with salt, remove and set aside. In the same pan, over medium heat, place the mortadella, sprinkle with the cheese and cover with a lid. Leave for 3 minutes or until the mortadella is golden and the cheese has melted. Open the bread in half, spread the mayonnaise, add the mortadella and the cheese, add the egg and serve immediately.
Spinach crepe with cheese

Ingredients:
- 1 egg
- 3 tablespoons hydrated tapioca starch
- 1/2 tablespoon cream cheese
- 1 dessert spoon of grated parmesan
Filling:
- 1/2 cup blanched spinach
- 1 grated raw carrot
- White cheese cubes
Preparation method:
Mix the dough ingredients until smooth. Pour into a non-stick pan. Wait for it to cook and turn it to brown on the other side. Remove and fill with the spinach, carrot and cheese mixture. Serve.
Baked sandwich

- 2 eggs
- 1 cup (tea) cottage cheese
- 1 cup grated Parmesan cheese
- Salt and oregano to taste
- Butter for greasing
- 1 pack of crustless bread (350g)
- 300 g of sliced mozzarella
- 300 g of sliced cooked ham
- 3 thinly sliced tomatoes
Preparation method:
In a bowl, beat the eggs, ricotta, parmesan and salt with a fork and set aside. In a greased medium baking dish, make layers of bread, mozzarella, ham and tomato seasoned with salt and oregano, repeating the layers until all the ingredients are used up, finishing with the bread. Drizzle with the reserved topping and bake in a preheated medium oven for 20 minutes or until golden brown. Remove and serve immediately.
Omelette cupcake

Ingredients:
- 4 beaten eggs
- Salt, black pepper and chopped basil to taste
- 1 teaspoon of yeast
- 1/2 grated courgette
- Greasing oil
- 1 seedless tomato, cut into cubes
- 100 g of diced mozzarella
- 100 g of diced cooked ham
- Grated Parmesan for sprinkling
Preparation method:
In a bowl, season the eggs with salt, pepper, basil and mix with the yeast. Divide the courgettes into 8 greased individual silicone molds. In each mold place 1 tomato cut in half.
Divide the cheese and ham among the molds. Divide the beaten seasoned eggs into the molds, without filling them too much. Sprinkle with parmesan and place half of the molds in the microwave at maximum power for 2 minutes. Remove and cook the remaining gnocchi for the same amount of time. Leave to cool, unmold and serve.
Tip: This is a great snack option for kids, and you can use other ingredients like grated carrots, canned corn and peas, shredded chicken or tuna.
Cloud eggs
Time: 20 minutes

Ingredients:
- 3 eggs
- Salt to taste
- White pepper to taste
- Grated parmesan to taste
Preparation method:
First separate the egg whites from the yolks. Be very careful so that the yolks do not burst. Then whip the egg whites and season them with a pinch of salt. Blend until it has a compact consistency.
Then, line a refractory baking tray or with baking paper, or grease it with olive oil. If the pan is non-stick the above steps are not necessary. Form two mounds with the egg white and, with the help of a spoon, open a hole in the center of each “dumpling”.
Place the egg whites in the preheated oven at 230 ˚C for about 5 minutes. Finally, remove the eggs from the oven, place the yolk in the center and sprinkle over the parmesan, black pepper and, if necessary, season with salt. Place in the oven for another 5 minutes. Serve hot!
