Ingredients for the light potato focaccia recipe
- 1 organic yeast tablet (15 g)
- 1 cup (tea) of warm water
- 3 tablespoons of wholemeal flour
- 1 teaspoon of salt
- 2 cups of flour (wheat)
- Wheat flour for flour

- 1 and 1/2 cup (tea) of sliced potatoes
- 1 sliced onion
- 2 minced garlic cloves
- 2 tablespoons of oil
- 2 tablespoons of grated Parmesan cheese
- 1 teaspoon of chopped fresh rosemary
Method of preparation
Whisk together the yeast, water, wholemeal flour and salt in a blender until smooth. Pour over the wheat flour and stir with a spoon until it comes off the sides of the bowl. Transfer to a smooth, lightly floured surface and knead for 5 minutes. Cover and let rise for 1 hour. Roll out the dough into a disc similar to a pizza. First lay the very thin slices of potato, onion, garlic, brushed with oil and sprinkle with Parmesan and rosemary. Bake in a preheated oven for 20 minutes or until golden brown.
