  • 4 salmon fillets (200 g each)
  • Salt and black pepper to taste
  • 1 tablespoon of lemon zest
  • 1 tablespoon of butter

ginger sauce

  • 1/2 cup (tea) of water
  • 1 tablespoon of fresh grated ginger
  • Salt to taste
  • 1/2 cup of light soy sauce
  • 1 tablespoon of honey

Mashed potato

  • 3 cups sweet potatoes (boiled and mashed)

Method of preparation

Season the salmon with salt, pepper, lemon zest. In a medium non-stick pan, melt the butter over medium heat and brown the fish for 5 minutes on each side. Reserve.

In the same pan, put the sauce ingredients and cook for 5 minutes over low heat, after boiling. Leave to cool, pass through a sieve and set aside. For the puree, in a skillet, place the ingredients over medium heat, stirring until smooth. Immediately after, serve the fish seasoned with the sauce and accompanied by the puree.

  • 4 salmon fillets
  • Salt and black pepper to taste
  • 2 tablespoons of butter
  • 2 tablespoons of grated onion
  • 1/2 cup of concentrated Sicilian lemon juice

  • 1/3 cup (tea) + 1 tablespoon of water
  • 1 teaspoon of cornstarch
  • Lemon zest for garnish

Method of preparation

First season the salmon with salt and pepper. In a large skillet over medium heat, melt the butter and brown the fish for 4 minutes on each side so that the center is moist. Transfer to a plate and keep warm.

Fry the onion for 3 minutes in a pan, pour the lemon juice and the vegetable broth dissolved in 1/3 cup (tea) of the water and cook for 5 minutes. Season with salt, pepper and add the cornstarch dissolved in the remaining water, stirring constantly, until it thickens. Pour over the salmon and serve, garnished with lemon zest.
