It is the perfect snack to serve at parties and family gatherings. It can also be paired with various types of fillings, such as meat, tuna and chicken. Skewers of minced meat

ingredients

Pasta

  • 1 kg of wheat flour
  • 30 g of dry yeast
  • 3/4 cup of sugar
  • 125 ml of olive oil Soy
  • 500 ml of warm water
  • 1 tablespoon of salt
  • Wheat flour for dusting
  • corn flour to sprinkle
  • oil for greasing

Filling

  • 700 g of minced meat
  • 5 chopped tomatoes
  • 1 chopped red onion
  • juice of 2 lemons
  • Salt and ground pepper to taste

Method of preparation

Pasta

In a container put the water, yeast and sugar, mix well and let it rest for 10 minutes. Then add the wheat flour, soybean oil and salt and mix until a homogeneous mass is obtained. Then sprinkle a surface with wheat flour and knead the dough until it starts to come off your hands. Let it sit for 10 minutes.

After, divide the dough into two equal parts and form a roll. With the help of a knife cut three fingers of dough, sprinkle your hands with corn flour, form a ball with the dough and flatten with your fingers, leaving the sides high. Repeat the process with all the dough. Grease a pan with oil, sprinkle with cornmeal and arrange the esfiha. Reserve.

Tip: if the dough does not come off your hands, add a little more wheat flour while kneading.

Filling

In a bowl put the minced meat, tomatoes, onion, lemon juice, salt and pepper and mix well. With the help of a spoon, place a portion of the filling on each esfiha disc and bake in a preheated oven at 180 ° C until golden brown. Serve immediately.

tuna sfiha

ingredients

Pasta

  • 3 cups of wheat flour
  • 2 teaspoons of salt
  • 15 g of organic yeast
  • 1 cup of warm water
  • 1/2 cup of oil
  • 1 beaten egg yolk
  • oil for greasing
  • Wheat flour for dusting

Filling

  • 2 tablespoons of olive oil
  • 3 minced garlic cloves
  • 1 chopped onion
  • 2 chopped tomatoes
  • 1 tablespoon of chopped parsley
  • 360 g of tuna in oil
  • Salt and black pepper to taste

Method of preparation

Pasta

Put the flour, baking powder and salt in a bowl and mix well. Add the water and oil and mix until a homogeneous mass is obtained. Then, using a spoon, take a portion of the dough and form a ball. Repeat the process with all the dough and set aside.

Filling

In a pan, add the oil and put over medium heat to heat. Add the garlic and onion and brown. Add the tomato and sauté until it wilts. Add salt, black pepper, scent of greenery and tuna and mix well. Turn off the heat and set aside.

Assembly

Open a ball of dough with the palm of your hand, put some filling in the center and close by shaping in the shape of a triangle. Repeat the process with the whole dough and filling and book. Grease a pan with oil and flour it with wheat flour, place the esfiha and let it rest for 20 minutes. Then brush the esfihas with egg yolk and bake in a preheated oven at medium temperature until golden brown. Serve immediately.



chicken esfiha

ingredients

  • 25 g of organic yeast
  • 1 tablespoon of sugar
  • 1/2 tablespoon of salt
  • 200 ml of soybean oil
  • 200 ml of warm water
  • 1 cup of chicken broth
  • 600 g of wheat flour
  • 1 beaten egg yolk
  • Wheat flour for flour

Filling

  • 1 kg of cooked and chopped chicken breast
  • 1 chopped onion
  • 1 clove of crushed garlic
  • Salt, ground pepper and chopped parsley to taste
  • 200 g of milk cream
  • 1 drizzle of soybean oil

Assembly

  • oil for greasing
  • Wheat flour for dusting

Method of preparation

Pasta

Put the sugar, salt, yeast and chicken broth in a container and mix well. Add the water, oil, egg and wheat and mix until a homogeneous mass is obtained. Then sprinkle a smooth surface with wheat flour and knead the dough until it starts to come off your hands. Then, using a spoon, take some dough and give it the shape of a ball. Repeat the process with all the dough and set aside.

Filling

In a pan, add the oil and heat over medium heat. Add the onion and garlic and brown. Add the chicken breast, salt, pepper and parsley and mix well. Finally add the cream and mix until it is incorporated with the other ingredients. Reserve.

Assembly

Open a ball of dough with the palm of your hand, put some filling in the center and close by modeling the esfiha in the shape of a triangle. Repeat the process with all the dough and filling and set aside. Grease a pan with oil and flour it with wheat flour, place the esfiha and brush with egg yolk. Bake in a preheated oven at medium temperature until golden brown. Serve immediately.
