Tiramisu ingredients:

- 1 1/2 cups unsweetened strong coffee (enough to soak the cookies)
- 5 tablespoons of whiskey or cognac
- 1 teaspoon of vanilla essence
- 6 tablespoons of chocolate powder
- 2 packs of champagne cookies
Method of preparation:
Chop the ricotta and beat in the blender with the boiling milk to break it up. Reserve. Mix the sugar and water and bring to the boil until it takes on the consistency of a thick syrup, but without taking on color. Meanwhile, whip the egg whites in a planetary mixer until fluffy and fluffy. Pour the syrup into the white and continue whipping for another 5 minutes. Gently mix the cream and ricotta dissolved in milk. Reserve.
Mix the coffee, whiskey and vanilla with 4 tablespoons of cocoa powder and quickly moisten the cookies. In a medium refractory, arrange a layer of cream, alternating it with the biscuits already moistened, with the last layer of cream. Cover with cling film and refrigerate for 12 hours. When ready to serve, using a fine mesh sieve, sprinkle with the remaining 2 tablespoons of icing chocolate.
