Black Eyed Bean Cream Ingredients:
- 4 cups black-eyed peas (cooked with broth)
- 3 cups of water (tea)
- 4 tablespoons of olive oil
- 1 chopped onion
- 2 minced garlic cloves
- 300 g of chicken breast, diced
- 1 chicken stock cube
- Salt and black pepper to taste
modthe preparation:
In a blender, blend the beans with the water for 3 minutes. Reserve. In a skillet, over medium heat, heat the oil and sauté the onion, garlic and chicken until golden brown. Add the chicken stock and beaten beans and cook until boiling. Season with salt and pepper, stir and turn off the heat. Transfer to a bowl and serve immediately.
