  • 4 fresh brewer’s yeast tablets (60 g)

  • 1 cup (tea) of warm water
  • 800 g + 4 tablespoons of wheat flour
  • 1 tablespoon of corn glucose
  • 1 tablespoon of powdered milk
  • 1/2 tablespoon of flour improver
  • 1/2 cup (tea) of oil
  • 1/2 tablespoon of emulsifying oil for bread
  • 1/2 cup unsalted (unsalted) butter
  • 1/2 tablespoon of panettone essence
  • 1 pinch of salt
  • 1/2 teaspoon of anti-mold
  • 4 tablespoons of cognac
  • 4 gems
  • 2 eggs
  • 1 1/2 cups of chocolate chips
  • Chocolate chips to decorate

Roof:

  • 1 cup of chopped milk chocolate
  • 1 tablespoon of butter
  • 3 tablespoons of cream without whey

Method of preparation:

In a bowl, prepare the sponge cake by mixing the yeast with 1 tablespoon of sugar until dissolved. Add the water and 4 tablespoons of flour. Cover with plastic wrap and let it rest for 15 minutes or until doubled in volume. In a mixer, beat the remaining sugar with the corn glucose, the powdered milk, the softener, the oil, the emulsifier, the butter, the essence, the salt, the anti-mold and the brandy until obtaining a very smooth cream.

Add the yeast mixture and finally add the yolks and beaten eggs. Beat very well until the mixture is smooth. Add the remaining wheat flour and knead for about 20 minutes, “tearing” the dough with your hands. Add the chocolate chips to the dough. Spread into panettone molds and leave to rest for 1 hour or until doubled in volume.

Bake in a preheated oven for 40 minutes. For the garnish, melt the chocolate with the butter for 1 minute in the microwave. Add the cream and cover the panettone. Then decorate with chocolate chips. Ok, now just serve!
