1. Date jam

Ingredients:

  • 1/2 cup almond flour (or other oil seeds)
  • 1 cup (tea) of dates
  • 3 tablespoons of cocoa powder
  • 3 tablespoons of coconut oil

Method of preparation:

Start by moisturizing the dates. There are two ways to do this: the first is to put them in a pot with boiling water and let them cook over low heat for about 15 minutes; the second option is to leave them immersed in water for 8 hours.

Put the hydrated dates, coconut oil, cocoa powder and almond flour in a blender. To help beat, add boiling water. Start beating in pulsed mode until the dates are mashed. Then beat for another 2 minutes on medium speed.

Transfer the mixture to a container. Grease your hands with water or coconut oil, take small portions and form balls. Then pass in the cocoa powder or grated coconut to decorate.

2. Guava Ice Cream

  • 200 ml of mineral water
  • 100 ml of coconut milk
  • 3 guavas, chopped and sieved (can be mixed with water)
  • 1 chopped frozen banana

Method of preparation:

Blend all the ingredients. Pour the mixture into the ice cream molds (they can be plastic cups) and put them in the freezer for 4-6 hours.

Note: Guava can be substituted with prunes (10 chopped prunes) or just bananas (4 chopped and frozen bananas).

3. Orange muffins

Age range: from 2 years old

Ingredients:

Muffin:

  • 2 eggs
  • 1 cup of milk
  • 80 g of butter at room temperature
  • 1 and 1/2 cup of demerara sugar
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon of chemical yeast
  • 1 and 1/4 teaspoons of salt
  • Zest of 1 orange
  • 50 g of rolled oats
  • 1 large apple, peeled and seeded, cut into cubes

Whipped cream with yogurt:

  • 1 cup of fresh cream
  • 1/2 cup of plain yogurt
  • 2 tablespoons of honey

Method of preparation:

In a bowl, combine the eggs and milk. Blend to mix and set aside. In another bowl combine the butter, sugar, flour, yeast and zest of 1 orange. Beat with the help of a mixer until it forms a farofinha. Gradually add the egg mixture until smooth. Add the apple and oatmeal and mix a little more to get a homogeneous mixture.

Pour the mixture into muffin tins and bake in a preheated oven at 180 ° C for about 25 minutes. When the muffins are cold, finish with the yogurt whipped cream and a little orange zest.

  • 1 cup of sifted whole milk powder
  • 2 tablespoons of milk
  • Powdered milk or oat bran for rolling

Method of preparation:

In a container, mix the sifted milk powder and add the milk until a homogeneous mixture is obtained (if necessary you can add more milk). When the dough has reached the point, grease your hands with a little coconut oil or butter and make balls. Then pass them in powdered milk or oat bran and leave them in the fridge for 30 minutes. It’s ready!

5. Coconut bars

Ingredients:

  • 3/4 cup of honey
  • 1/3 cup of coconut milk
  • 3 tablespoons of peanut butter
  • 4 cups of grated coconut flakes
  • 200 g of melted dark chocolate
  • mixed chestnuts
  • toasted coconut flakes

Method of preparation:

In a pan add the honey, coconut milk and heat for about 10 minutes (or until you get a caramel). Turn off the heat, add the peanut butter and mix well. Add the grated coconut and mix well.

In a form covered with parchment paper, roll out the coconut mixture and press well to make it smooth. Put in the freezer for 1 hour. Then unmold and cut into rectangles.

Dip each bar in melted chocolate, place it on a baking sheet covered with parchment paper and finish as desired: with chestnuts, dried fruit, coconut flakes or cocoa nibs.

Method of preparation:
