What are the types of olive oil?

Extra virgin

In this category the oil must have an acidity of up to 0.8% and without organoleptic / sensorial defects, this being the type of oil that has best preserved its aromatic and gustatory qualities. In addition, an acidity of up to 0.8% indicates that all stages of processing (ripening of the olives, harvesting of the fruits, cleaning, extraction and packaging) have been carried out correctly.

Virgin

Olive oils that have some sensory defect and / or an acidity higher than 2% are called virgin olive oil. Therefore, products with acidity greater than 2% are not suitable for consumption and these products undergo a chemical process called refinement, which reduces the acidity of the product, making it suitable for consumption.

The refining process in virgin olive oils removes, in addition to the high acidity, the aromatic and aromatic substances, as well as natural antioxidants, color pigments and vitamins. A small amount of extra virgin olive oil is normally added to this refined fraction of the product to restore flavor, aroma and color to the final product. Therefore, these oils are commercially called “Olive Oil” and their acidity reaches up to 1%.
