Ingredients:

  • 1 kg of wheat flour
  • 1 tablespoon of salt
  • 300 g of softened margarine
  • Oil for greasing
  • 1 egg yolk for brushing

Filling

  • 2 tablespoons of olive oil
  • 1 grated onion
  • 2 crushed garlic cloves
  • 500 g of minced meat
  • 1 chopped seedless tomato
  • 1 teaspoon(s) ground cumin
  • 3 teaspoons of salt

Method of preparation:

  1. In a bowl, put the flour, salt and margarine, mixing with your fingers to form a farofa.
  2. Add the warm water, little by little, until the dough is smooth and disapproving of your hands and set aside.
  3. For the filling, in a skillet over medium heat, heat the olive oil and sauté the onion, garlic and meat until all the water has dried up.
  4. Add the tomato, cumin, salt and saute for 5 minutes and set aside.
  5. Open the dough with a rolling pin and cut discs, with a pastry cutter or with the mouth of a glass.
  6. Place the filling and close the entire edge by ‘weaving’ the dough.
  7. Transfer to a greased baking sheet, brush with egg yolk and bake in a preheated medium oven for 20 minutes or until golden brown.
  8. Remove from the oven, let it cool and serve.

Ingredients:

  • 1 cup cheese (chopped)
  • 2 cups lettuce (chopped)
  • pepper to decorate

Filling

  • 3 tablespoons of oil
  • 1 chopped onion
  • 3 cups cooked and shredded beef
  • 2 chopped seedless tomatoes
  • 1 sliced ​​Cambuci pepper
  • Salt and black pepper to taste

Pasta

  • 1 and 1/2 cups wheat flour (tea)
  • 1 1/2 cups cornmeal (approximately)
  • 1/2 teaspoon salt
  • 3 tablespoons of butter
  • 1 cup of water (warm)
  • Soft wheat flour for flouring
  • Butter for greasing

Method of preparation:

  1. For the filling, heat a pan with the oil over medium heat and fry the onion until soft.
  2. Add the meat, tomato, cambuci pepper, salt, black pepper and brown for 3 minutes.
  3. Turn off the heat and reserve the mixture.
  4. For the dough, mix the flour, cornmeal, and salt in a bowl.
  5. Add the butter and water, a little at a time, kneading until you get a soft dough.
  6. If necessary, add more cornmeal. Knead, cover and leave to rest for 30 minutes.
  7. Roll out on a floured surface to a very thin layer.
  8. Cut into circles with a pastry cutter.
  9. Heat a non-stick pan greased with butter over low heat, fry one disc of dough at a time until lightly browned and set aside.
  10. To assemble, divide the filling over the pastry, sprinkle with cheese, lettuce and roll up like a pancake.
  11. Decorate with the peppers and serve immediately.
