Ingredients:

  • 1 large potato cut into strips
  • Salt and black pepper to taste
  • 2 tablespoons of oil
  • 2 tablespoons of chopped onion
  • 1 minced garlic clove
  • 3 eggs
  • 2 tablespoons of tomato paste

Method of preparation:

  1. Cook the potato in salted water until al dente.
  2. Drain and pat dry on a paper towel.
