Performance: 1 liter (4 portions)

Preparation time: Eight hours

Difficulty: easy

Ingredients:

  • 1 liter of whole milk
  • 2 tablespoons of rennet

Method of preparation:

  1. Put the milk in a saucepan and bring to a boil.
  2. Then, remove from the heat and leave to cool until it reaches about 45Β°C (it is a warm, almost tepid and bearable temperature). This is the weak point!
  3. Separately, dilute the rennet in a little warm milk and then add it to the rest.
  4. With a ladle mix the mixture well as follows: dip the ladle into the milk, lift it and pour the milk from above so that it foams and oxygenates.
  5. Repeat this step several times.
  6. Let the bowl of curd rest, in a place sheltered from the wind and preferably wrapped in a cloth, until the following day or for 8 hours.
  7. Finally, have fun!
