Method of preparation
Cassava Cream
In a pressure cooker, put cassava, cover with water and bring to medium heat. Cook for 10 minutes after starting the pressure. Turn off the heat, wait for the pressure to release, drain the water, mash the cassava into a container and set aside. In a blender put the oats, the water and let it rest for 30 minutes. Then add the salt, the cassava set aside and beat until smooth and creamy. Reserve. In a pan, put the coconut oil and heat over medium heat. Add the onion, garlic and saute. Add the cassava cream and cook for 10 minutes, stirring constantly. Fix salt and book.
Filling
In a pan, put the coconut oil and heat over medium heat. Add the garlic, the onion and brown. Add the soy protein, lemon juice, salt and sauté for 5 minutes. Season with oregano and cumin. Add the tomato purée, the olives, the green perfume and mix well. Turn off the heat and set aside.
Assembly
Arrange the filling on a serving plate and spread it out with the help of a spoon. Cover with the cassava cream, sprinkle with oregano and serve immediately.

ingredients
- 500 g of wheat flour
- 1 1/2 tea cup of water
- 1 peeled and chopped onion
- 3 cloves of garlic, peeled and crushed
- Salt, soy sauce, green perfume and ground black pepper to taste

Method of preparation
Put the soft wheat flour, the water in a bowl and mix until you get a homogeneous consistency. template mass in the shape of a ball, add water and leave to soak for 8 hours. Afterwards, wash the dough under running water until the water starts to come out clear. Let the dough dry and shape it as you prefer and secure it with a string.
Transfer the seitan to a pressure cooker, add soy sauce, salt, parsley, black pepper, onion, garlic and cook over medium heat until pressure is reached. Then let it cook for 20 minutes. Turn off the fire and wait for the pressure to go out. Then transfer the seitan to a serving plate and take it to a preheated oven at medium temperature until golden brown. Serve immediately.
