plain roast shank
ingredients
- 3 kg pork shank
- 6 cloves of garlic, peeled and crushed
- 2 onions peeled and chopped
- Juice of 4 lemons
- 1/2 cup of tea mustard
- 1/2 pack of green odor
- Salt, ground white pepper and olive oil to taste
- Oil for greasing
Method of preparation
Place the stem in a container and make diagonal cuts on the skin, forming diamond shapes. Reserve. In a blender, put the garlic, onion, lemon juice, mustard, green smelt, salt and black pepper and beat until you get a paste. Spread over the stem and cover with plastic wrap. Refrigerate for 6 hours.
Then remove the shank from the refrigerator and leave it at room temperature. Grease a baking dish with oil, place the shin, cover with aluminum foil and cook in a preheated oven at medium temperature for 1 hour. Remove the paper and bake for another 1 hour. Serve immediately.
Roasted Ham with Pineapple Salsa
ingredients

- 4 kg boneless pork shank
- 1 pineapple peeled and cut into small pieces
- 1/2 glass of white wine
- 3 onions, peeled and cut into half moons
- 6 cloves of garlic, peeled and crushed
- 3 bay leaves
- 3 cloves
- 1 cinnamon stick
- 5 grains of black pepper
- 2 tablespoons of salt
- olive oil to taste
Sauce
- 1/2 onion, peeled and chopped
- 1 tablespoon of butter
- 1 tablespoon of wheat flour
- 1 and a half tablespoons of honey
- Salt and ground black pepper to taste
Assembly
- 1/2 pineapple, peeled and sliced
Method of preparation

In a blender, place the pineapple and white wine and blend until smooth. Reserve. Put the shin, onions, garlic, bay leaves, cloves, cinnamon and black peppercorns in a pan. Drizzle the shank with the reserved pineapple juice, cover with plastic wrap and refrigerate for 3 hours, turning meat so that all sides absorb the juice. Afterwards, remove the shank from the refrigerator and leave it at room temperature.
Transfer the shank, onion and garlic to a roasting pan, discard the cinnamon, bay leaves, cloves and black peppercorns, and reserve the pineapple juice. Dry the stem with absorbent paper and, with the help of a knife, make diagonal cuts in the skin, forming diamond shapes. Season with salt and drizzle with olive oil. Cover the meat with aluminum foil and cook in a preheated oven at 180ºC for 3 hours and 30 minutes. Then, remove the paper, add the pineapple slices, increase the temperature to 240ºC and put back in the oven until the peel is crispy.
Sauce
Put the butter in a pan and heat over medium heat. Add the onion and saute for 3 minutes. Add honey and wheat flour and mix for 3 minutes. Water the mixture with the reserved pineapple juice and mix well. Cook for 5 minutes, stirring occasionally, after it begins to boil. Then turn off the heat and season with salt and pepper. Drizzle the shank with the sauce and serve after.

Roasted ham with potatoes
ingredients
- 1 kg pork shank
- 5 cloves of garlic, peeled and crushed
- 1 lemon juice
- 1 teaspoon of salt
- 1 cup of beef broth
- Salt and ground black pepper to taste
- 5 tablespoons of olive oil
- 1 bunch of chopped rosemary
- 10 potatoes peeled and cut into slices
Method of preparation
Put the garlic, lemon juice, salt, black pepper, meat broth, olive oil, rosemary in a bowl and mix well. Reserve. Place the shank in a baking dish and, with the help of a knife, make diagonal cuts in the skin, forming lozenges. Pass the mixture set aside on the shin, cover with plastic wrap and leave to rest for 2 hours. Then remove the plastic, cover the meat with aluminum foil and place it in a preheated oven at high temperature for 1 hour. After, add the potatoes and take it to the oven for another 1 hour. Remove the aluminum foil and cook until browned. Serve immediately.
Baked ham in beer

- 2 kg boneless pork shank
- 100g of Bacon diced
- 100 g of pitted black plums
Sauce
- 1 can of beer
- 1 peeled and chopped onion
- 6 cloves of garlic, peeled and crushed
- 2 tablespoons of sugar
- 2 table spoons of salt
Method of preparation
Sauce
In a blender, put the beer, onion, garlic, sugar and salt and blend until smooth. Reserve.
