Tender with passion fruit syrup

Time: 1h30
Performance: 8 portions
Difficulty: easy
Ingredients:
- 1 boneless soft ham (approx. 1 kg)
- 1 tablespoon of butter
- 1/2 cup (tea) of pineapple, mango and passion fruit juice
- 1 sachet of passion fruit syrup
- 15 cloves to decorate
- Chard leaves, radicchio and curly parsley to garnish
Rice
- 1 tablespoon of oil
- 100 g of diced bacon
- 1 cooked and diced small carrot
- salt to taste
- 2 cups broccoli, cooked and chopped
- 4 cups cooked white rice (tea)
- 1/2 cup cashews (chopped)
Method of preparation:
- In a refractory place the fillet, grease it with butter and drizzle with juice.
- Cover with aluminum foil and place in a preheated medium oven for 20 minutes.
- Remove the aluminum foil and leave to brown for 10 minutes.
- Decorate with cloves and keep warm.
- For the rice, in a skillet heat the oil over medium heat and fry the bacon until golden brown.
- Add the carrot, salt, broccoli and rice and mix well.
- Put it in the refractory and finish with the cashews.
- Prepare the passion fruit syrup according to the package instructions and serve it in a gravy boat with the tender.
- If desired, garnish with chard leaves, radicchio and curly parsley.
sweet and sour smoked sausage

Time: 20min (+30min fridge)
Performance: 8 portions

Ingredients:
- 1 chopped green apple
- Juice of 1/2 lemon
- 3 cups minced smoked chicken
- 2 diced boiled potatoes
- 1 grated carrot
- 1/2 cup seedless white raisins
- 1/2 cup seedless black raisins
- 1 stalk of celery chopped
- 1/2 can drained corn
- 1 cup mayonnaise (tea)
- 1/2 cup cream (milk)
- Salt and chopped basil to taste
- Straw potato to decorate
Method of preparation:
- In a bowl, mix the apple, lemon juice, chicken, potato, carrot, raisins, celery, corn, mayonnaise, cream, salt and basil.
- Cover and refrigerate for 30 minutes.
- Transfer to a serving plate, decorate with straw potatoes and serve.
Advise: If you prefer, replace the smoked chicken with leftover roast chicken or turkey from dinner. Besides saving money, it’s delicious!
Rice with champagne, almonds and raisins

Time: 40 minutes
Performance: 6 portions
Difficulty: easy
Ingredients:
- 3 tablespoons of butter
- 1 tablespoon of olive oil
- 1 chopped onion
- 1 minced garlic clove
- 3 cups rice (washed and drained)
- 1/2 cup seedless white raisins
- 1/2 cup seedless black raisins
- 1 cup unsalted almonds (chopped)
- 1 1/2 cups (tea) champagne
- 4 1/2 cups warm water
- salt to taste
Decoration
- 2 tablespoons of butter
- 2 onion rings
- 1 tablespoon of sugar
- Sliced toasted almonds and chopped parsley for dusting
Method of preparation:
- Heat a pan with butter and oil over medium heat and saute the onion and garlic for 2 minutes.
- Add the rice and fry for another 3 minutes.
- Add the raisins, almonds, champagne and sauté for 2 minutes.
- Add the water, salt and cook in a half-covered pot over medium heat until the water has almost dried up.
- Lower the heat and cook in a covered pot until the water dries up completely and the rice softens.
- Turn off and reserve.
- For the decoration, heat a pan with the butter and fry the onion sprinkled with sugar over low heat until golden brown.
- Fluff the rice with a fork, transfer it to a plate, garnish with the onions and sprinkle with almonds and parsley.
- Serve immediately.
farofa caramelized onion

Time: 15 minutes
Performance: 6 portions

Ingredients:
- 200 g of diced bacon
- 3 tablespoons of butter
- 3 onions in strips
- 1 tablespoon of sugar
- 1 cup black raisins (tea)
- 2 cups cassava flour (tea)
- Salt and black pepper to taste
Method of preparation:
- Heat a pan and fry the bacon in its own fat until golden brown. Remove and reserve.
- In the same pan, add the butter and fry the onion with the sugar until it caramelises.
- Add the reserved bacon, raisins, flour, salt and pepper, mix and turn off the heat.
- Transfer to a platter and serve after.
Christmas appetizer

Time: 40 minutes
Performance: 24 units
Difficulty: easy
Ingredients:
- 4 large buns
- 24 Stiksy® Snack Sticks
- Olive oil for greasing and brushing
- Pulp of 1 ripe avocado
- 1 lemon juice
- 1/2 chopped onion
- 1/2 chopped seedless pepper
- 1/2 cup chopped parsley (minced)
- salt to taste
- Chopped olives and crushed red pepper to garnish
Method of preparation:
- Cut each focaccia into 6 slices, like a pizza.
- Stick a Stiksy stick into each slice of bread and place in a greased baking pan.
- Brush with olive oil and bake in a medium preheated oven (180°C) for 5 minutes, without browning.
- Remove from the oven and leave to cool.
- In a bowl, mix the avocado pulp, lemon juice, onion, bell pepper, green herb and salt to form a paste.
- Distribute the bread slices on top, making a layer.
- Decorate with olives and peppers. Serve.
