Ingredients:

  • 1 celery stalk cut into cubes
  • Cold vegetables to taste
  • 1 grated carrot
  • 2 mandioquinhas cooked in cubes
  • 1 large potato, diced
  • 1/2 cup corn (drained)
  • 2 cups chicken (cooked and shredded)
  • 1/2 cup mayonnaise (tea)
  • salt to taste
  • 1/2 cup cream (milk)
  • 20 pasta ready for boats
  • Straw potato to decorate

Method of preparation:

  1. In a bowl mix the celery, carrot, potato, cassava, corn and chicken.
  2. In another bowl, mix the mayonnaise and cream and season with salt, pepper and green perfume.
  3. Then pour over the previous mixture and mix lightly.
  4. Finally, distribute among the boats, sprinkle straws over the potatoes and serve.

Meat skewers with vegetables

ingredients

  • 800 g of rump cut into cubes
  • Salt and black pepper to taste
  • 1 diced red onion
  • 200 g of cherry tomatoes
  • 1 diced yellow pepper
  • olive oil for dressing
  • 1 diced green pepper
  • Farofa and vinaigrette to accompany

Method of preparation:

  1. Season the meat with salt and pepper.
  2. Then, on wooden barbecue skewers, intersperse cubes of meat, onion, cherry tomato and yellow and green pepper.
  3. Repeat the process making more layers and making more skewers until you run out of ingredients.
  4. Then place in a skillet with a rack, drizzle with olive oil, and place in a preheated medium oven for 20 minutes or until golden brown.
  5. Remove and serve immediately, accompanied by farofa and vinaigrette.

Ingredients:

  • 500 g of mozzarella in strips
  • 1 cup wheat flour (tea)
  • 2 eggs
  • Fry oil

bread crumbs

  • 5 slices of stale French bread
  • 4 tablespoons of olive oil
  • 2 minced garlic cloves
  • Salt and black pepper to taste

Method of preparation:

  1. For the breadcrumbs, place the slices of bread in a baking dish and drizzle with olive oil mixed with garlic, salt and pepper.
  2. Place in a medium oven, preheated, for 10 minutes or until toasted.
  3. Remove from the oven, leave to cool and grate on a coarse grater.
  4. Dip the mozzarella strips in the wheat flour, beaten egg and breadcrumbs.
  5. Repeat the process one more time before frying.
  6. Fry, a little at a time, in hot oil until golden brown.
  7. Drain on absorbent paper and serve immediately.

Broccoli And Bacon Pancake

Ingredients:

  • 1 tablespoon of butter
  • 200 g of diced bacon
  • 1 chopped onion
  • 2 cups broccoli (chopped)
  • 1/2 cup chopped parsley (minced)
  • Salt and black pepper to taste
  • 1 cup of milk (tea)
  • Soft wheat flour for breading
  • 1 cup boiled and mashed potatoes
  • Fry oil
  • 1 cup wheat flour (approximately)

Method of preparation:

  1. Heat a pan with the butter over medium heat and saute the onion and bacon until golden brown.
  2. Add the broccoli, the green perfume and sauté for 3 minutes.
  3. Add the milk, potatoes, flour, salt, pepper and cook until it thickens and pulls away from the bottom of the pan.
  4. If necessary, add more flour. Turn it off and let it cool down.
  5. Form balls, roll them in wheat flour and fry them, a little at a time, in hot oil until golden brown.
  6. Drain on absorbent paper and serve immediately.

Fish pie with pepper jelly

Performance: 6 portions

Difficulty: easy

Ingredients:

  • 600 g of potatoes in their skins
  • 500 g of cooked and minced white fish
  • 2 eggs
  • 1 tablespoon of wheat flour
  • 4 tablespoons of corn starch
  • 1/2 chopped onion
  • 1 minced garlic clove
  • Salt and black pepper to taste
  • Fry oil

Pepper jelly

  • 1 cup (tea) of sugar
  • 3 chiles deseeded and chopped
  • 1 cup of orange juice (tea)
  • 1 unpeeled grated apple

Method of preparation:

  1. For the gelatin, in a saucepan, mix together the sugar, pepper, orange juice, apple and bring to medium heat, stirring occasionally for 10 minutes or until thickened and to the point of gelatin.
  2. Transfer to a gravy boat and leave to cool.
  3. Cook the potato in a pan with water until it softens.
  4. Drain and pass through the juicer while still hot.
  5. Pour into a bowl, add the fish, eggs, flour, cornstarch, onion, garlic, season with salt and pepper and mix.
  6. Shape the gnocchi with your hands and fry them, a little at a time, in very hot oil, until golden brown.
  7. Drain on a paper towel and serve snacks with the jelly.
