Tropeiro beans with fried banana

Ingredients:

  • 1 cup bacon (diced)
  • 2 slices of chopped Calabrian sausage
  • 2 tablespoons of butter
  • 1 chopped onion
  • 2 minced garlic cloves
  • 2 cups cooked pinto beans (no broth)
  • 1 cup cassava flour (tea)
  • 2 hard-boiled and chopped eggs
  • Salt, black pepper and chopped parsley to taste

Fried banana

  • 2 tablespoons of wheat flour
  • 2 cups of water (tea)
  • 1 cup breadcrumbs (tea)
  • 2 tablespoons cornmeal
  • Fry oil

Method of preparation:

  1. In a skillet, over medium heat, saute the bacon in its own fat until browned.
  2. Then add the sausage and fry for 3 minutes.
  3. Then, add the butter, onion, garlic and saute for 3 minutes.
  4. Immediately after, add the beans, the manioc flour, the eggs, the salt, the pepper and the green odor.
  5. Finally mix and turn off the heat.
  6. For the bananas, roll them in a paste made with wheat flour and water.
  7. Secondly, roll them in breadcrumbs mixed with cornmeal and fry them, little by little, in hot oil until golden brown.
  8. In the meantime, drain them on absorbent paper.
  9. Serve with beans and, if desired, with rice and lettuce salad.
