Pay attention to the preparation of the dough

When preparing the focaccia it is necessary to choose how the dough will be prepared. You have to wonder if the dough will be kneaded or not! The kneading is a moment in the preparation of all types of bread in which it is necessary to dedicate oneself to manipulating the dough, to give it the ideal elasticity. To do this, count on the help of a spoon and use it as much as possible when mixing the ingredients, until the dough “detaches” from the container without problems.

Then, sprinkle some flour on your hands and the support surface. Then roll out the dough and fold it over itself several times until you feel it become elastic. This activity usually takes up to 15 minutes. In this way the dough will be able to retain all the air and will be soft and spongy.

Respect the rest time

On the other hand, if you don’t want to knead the dough, let it rest in the fridge for 12 hours. The fermentation process will be completed without difficulty. In fact, you can even leave it on longer if you want. The important thing is that the dough does not stay in the fridge for more than 36 hours so as not to collapse and lose the necessary leavening strength when it goes into the oven.

Don’t be afraid to dare!

It’s exactly what you read: don’t be afraid to create the combinations you prefer! The traditional focaccia is made with sea salt, olive oil and rosemary, but it is possible to create delicious and unusual versions, full of flavors and details. It is possible to incorporate basil, olives and Parmesan; or zucchini with fine herbs, or tomato sauce and pesto.

Also, to be a little more daring, how about including chicken with ricotta or caramelized onions with cheese? So start from the basics with the traditional focaccia recipe and let yourself be amazed! To watch:
