Ingredients:

  • 1/2 kg of white beans
  • 5 cups of water (tea)
  • 200 g of chopped smoked bacon
  • 1/2 kg thickly sliced ​​Tuscan sausage
  • 2 large onions chopped
  • 3 minced garlic cloves
  • 3 large chopped tomatoes
  • Salt and black pepper to taste
  • 1 small sprig of rosemary
  • 2 tablespoons of grated Parmesan
  • 1/4 cup chopped parsley (minced)

Method of preparation:

  1. Soak the beans for 24 hours
  2. Drain and cook in a pressure cooker with water for 25 minutes
  3. Reserve 3 cups (tea) of the cooking water and drain the rest
  4. In a large skillet, over medium heat, saute the bacon until it releases some of the fat, add the sausage and onion and saute until golden brown
  5. Add the garlic and brown it quickly
  6. Drain half the fat, add the cooked beans, tomatoes, salt, pepper and rosemary
  7. Top with the reserved broth, cover and cook over medium heat for 20 minutes.
  8. Open the pan and garnish with Parmesan and parsley
  9. Serve immediately.
