It’s hard to find someone who doesn’t love a good bite of chicken, considered one of the most popular and loved snacks in the world. However, over the years, many controversies and myths have arisen about how it is made, including the belief that it is made from crushed chicks. But it’s true? Today we will shed some light on this and other questions about this crunchy and delicious breading.

First of all, it is important to underline that the Ministry of Agriculture, Livestock and Supply (MAPA) has a technical regulation which defines the identity and quality of breaded products, including croquettes.

According to MAPA’s Technical Regulations for the Identity and Quality of Breaded Products, “breaded products are industrialized meat products obtained from the meat of different species of animals for slaughter, with the addition of ingredients, molded or not, and covered with a coating of material suitable for characterizing Esso”.

That is, in this dough there are no crushed chicks, what we find in it is: 50% chicken fillet and the rest is made up of chicken skin and/or other fats, vegetable proteins, corn starch or flours and starch.

In Brazil, MAPA requires kibble to be composed of at least 10% protein and a maximum of 30% carbohydrates.

Production process of nuggets

Now that we have clarified the initial controversy, let’s explain the kibble production process. The first phase involves the selection and preparation of the meat. Normally chicken meat is used, but meat from other birds, such as turkey, can also be used. These meats undergo a deboning process and are ground to obtain a uniform texture.

After grinding, other ingredients are added to the ground chicken. These ingredients can vary by recipe and manufacturer, but generally include seasonings, spices, salt, emulsifiers, and stabilizers. These components are responsible for enhancing the flavour, texture and preservation of the final product.

With the mixed ingredients, the croquette dough is shaped into characteristic shapes, such as rectangular or round. Then follows the breading, which consists of coating the pieces of meat with a crunchy coating. This topping is usually made with wheat flour, egg, and breadcrumbs, but can also include other ingredients such as seasonings and seasonings to add more flavor.

After breading, the croquettes undergo a pre-cooking process, which aims to guarantee food safety and preserve the juiciness of the meat. In this phase they are partially cooked at high temperatures.



Finally, the pre-cooked croquettes are frozen to preserve their quality and freshness. This quick freezing process maintains the texture and flavor of the product, allowing it to be stored for a long period of time.
