Enzo has to make a difficult choice
In the atelier, Enzo has a meeting with Miriel and Delobel. The latter explains his concept to him in more detail: he wants to open the first restaurant in Nice, and then launch a franchise if all goes well. He wants to rethink classic French gourmet cuisine through street food. Enzo is more motivated than ever. When DeLabel asks him to create a two-course menu and organize a tasting for him by Thursday so he has something to present to the investors they have a meeting with on Friday, Enzo feels a little overwhelmed. Miriel then offers to form a brigade to help him.
Enzo then finds Vic, Billy, and Tom in the cafeteria to tell them about this and ask them to be part of his crew. They all are. Enzo entrusts them with his ideas: he wants to start with a French street food classic and give it a gastronomic twist. If Bill is thinking ham and butter and Tom is thinking croque monsieur, Vicky suggests going for the pan. Enzo was captured.
A little later, Vicky thanks Enzo for bringing him into his brigade despite his mediocre cooking skills. Enzo encourages him to trust himself and take note of all the progress he’s made. Vicki then asks her friend if she told DeLobel about her upcoming surgery. But Enzo has no intention of doing it without ruining it. At the same time, Enzo’s parents arrive at the institute. Indeed, the latter asked them to come to the hospital, where he has an appointment with a surgeon.
The on-site surgeon recommends surgery as soon as possible. He offers Enzo the Friday morning slot. He is optimistic about his chances of walking again after the surgery, but stresses how urgent the surgery is to remove the cyst blocking his spinal cord before it gets too big and we can no longer operate. However, Enzo is worried about the risks of the operation. The surgeon answers him honestly: he may remain paraplegic, or even die. Enzo and his parents admit they need some time to think. The surgeon takes and saves the Friday slot for them just in case.
Back at the Institute, Enzo talks to Vic and his parents. If he does not undergo surgery, his relatives manage to convince him that this is the best decision, even if it is scary.
So Enzo goes to the workshop to warn Billy and Tommy. But the latter gives him a taste of what they’ve been working on, and Enzo doesn’t dare tell them anything. He prefers to stay with them to move his project forward. At the end of the day, Vicki and her parents find her in the workshop after searching the entire institute for her. As Billy and Tom leave, Enzo announces his final decision: he refuses to undergo a second operation…
Theo announces his project to his father
At breakfast, Theo and Charlene manage to admit to their father that they miss Axel. Emmanuel admits that he got used to being in her house. Charlene reassures him that she and her brother have no intention of leaving the nest and will have to take care of them for a while. This makes Theo uncomfortable.
At Double A, Anais notices that Theo is to the west. The latter admits that she was afraid to talk to her father about their culinary travel project because she feels abandoned. Anais then suggests postponing the trip. But Theo remains determined to find the right moment to announce his decision to Teyssier.
In the cafeteria, Anais talks it over with Salome and admits that she selfishly took the pole because she really doesn’t want to go with Theo. He wants to stay for Master and Double A.
After the service, Teissier goes to the kitchen to see Theo and Anais. The young chef takes the opportunity to start and explain his culinary travel project to his father. This one is taken aback, but eventually encourages his son to follow his ideas. Theo is relieved.
Thibault wants to join the institute
Back at the institute with Nael, Jasmine meets Thibault, who comes after her breakup with Axel. As for him, he has a meeting with the leadership of the institute for the purpose of integration. Jasmine looks at her case and notices that it is very extensive. However, Thibaut fears that Teissier is still angry with him for accusing him of Auguste’s murder.
During an interview with Miriel and Teyssier, Thibault expresses his desire to go straight into his sophomore year. But he also asks not to get any preferential treatment. Even if he has a good record, Tessier especially wants to prove what he can do in the kitchen.
He instructs the young man to carve four identical ducks out of an apple in thirty minutes. Thibaut is doing his work in the studio. Jasmine comes to see him, surprised by the nature of his cooking test.
When Teissier arrives to assess Thibaut, he orders Jasmine to stay. The director of the institute believes that his sculptures are good. Thibault suspects that he is trying to find out if he was a good little soldier who knows how to apply the rules.
To prove that he also has a personality, Thibault shows him two additional ducks that he carved out of a green apple. To challenge him even more, Teissier asks him a series of questions designed to test his culinary knowledge. Thibault knows the right answer every time. Teissier finally reveals to him that he has been taken to the Institute.
