Christmas cookies

Time: 45 minutes (+30 minutes in the fridge)

Performance: 40 units

Difficulty: easy

Ingredients:

  • 1/2 cup (tea) sugar
  • 1 cup butter (tea).
  • 2 egg yolks
  • 1 teaspoon powdered ginger
  • 2 cups wheat flour (approximately)

Icing

  • 1 egg white
  • Juice of 1/2 lemon
  • 1 1/2 cups (tea) powdered sugar
  • Green and red gel food coloring

Preparation method:

  1. In a bowl, mix the sugar, butter, egg yolks, ginger and flour until you obtain a smooth mixture.
  2. If necessary, add more flour little by little
  3. Wrap in cling film and refrigerate for 30 minutes
  4. Roll out the dough with the help of a rolling pin, between two sheets of plastic, until it is thin.
  5. Cut out the Christmas motifs using cookie cutters and then place them on a large baking tray lined with baking paper.
  6. Bake in a preheated medium oven (180°C) for 15 minutes or until cooked through, without browning.
  7. Remove and let cool
  8. Meanwhile, for the icing, in a bowl, in the mixer or with a hand whisk, beat the egg white until stiff.
  9. Without stopping whisking, gradually add the lemon juice and sugar until the mixture becomes consistent.
  10. Divide into 3 parts
  11. Dye one green, the other red and leave one white
  12. Place each of them in a piping bag fitted with a fine pearl nozzle and decorate the biscuits.
  13. Let it dry, package it and give it as a gift or serve it immediately.
