Coffee charlotte: bet on the classic dessert with a Brazilian touch

Charlotte with coffee

Time: 2h (+3h in the fridge)

Performance: 10 servings

Difficulty: easy

Ingredients:

  • 200g chopped milk chocolate
  • 2 tablespoons unsalted butter
  • 6 tablespoons of sugar
  • 6 eggs (whites and yolks separated)
  • 1 teaspoon of instant coffee
  • 1 tablespoon of warm water
  • 1/2 cup rum (tea).
  • 2 cups whipped cream
  • Whipped cream and candied fruit to decorate

Preparation method:

  1. Mix the chocolate with 1 tablespoon of butter and melt it in a bain-marie.
  2. In a mixer, add the remaining butter and sugar and beat for 5 minutes or until fluffy.
  3. Add the egg yolks, melted chocolate and beat well.
  4. Gently add the whipped egg whites and the coffee dissolved in the water.
  5. Dip the biscuits in the rum and, with them, line a springform pan with a removable base.
  6. Cover with a layer of chocolate cream, one of whipped cream, another of biscuits and continue layering, finishing with the cream.
  7. Place in the refrigerator for 3 hours, remove and decorate with whipped cream and candied fruit. Serve immediately.
