Charlotte with coffee

Ingredients:
- 200g chopped milk chocolate
- 2 tablespoons unsalted butter
- 6 tablespoons of sugar
- 6 eggs (whites and yolks separated)
- 1 teaspoon of instant coffee
- 1 tablespoon of warm water
- 1/2 cup rum (tea).
- 2 cups whipped cream
- Whipped cream and candied fruit to decorate
Preparation method:
- Mix the chocolate with 1 tablespoon of butter and melt it in a bain-marie.
- In a mixer, add the remaining butter and sugar and beat for 5 minutes or until fluffy.
- Add the egg yolks, melted chocolate and beat well.
- Gently add the whipped egg whites and the coffee dissolved in the water.
- Dip the biscuits in the rum and, with them, line a springform pan with a removable base.
- Cover with a layer of chocolate cream, one of whipped cream, another of biscuits and continue layering, finishing with the cream.
- Place in the refrigerator for 3 hours, remove and decorate with whipped cream and candied fruit. Serve immediately.
