Ingredients Rice
– 3 cups of rice
– 6 cups of water
– salt to taste
Ingredients Complements (Christmas Rice)
– 3 cups fresh broccoli, cut into small florets
– 3/4 cup(s) sliced almonds, toasted.
– 6 cloves of garlic, chopped.
– olive oil to taste + a little if necessary
Ingredients TO FINISH
– extra virgin olive oil to taste
PREPARATION:
- Separate the ingredients and utensils for the recipe.
- Place a pan with water (see quantities in the ingredients) over a high heat to boil to cook the rice (see preparation).
- Wash the broccoli and divide it into very small florets.
- Peel the garlic and mince it.
PREPARATION:
Rice (cooking) (this step can be done in advance, in the pre-preparation phase)
- Measure the rice: it is not necessary to wash it, but if you prefer, place it in a colander and rinse it under running water.
- When the water boils, add the rice and season with salt.
- Place over high heat and when the water returns to the boil, reduce the heat to medium and cook for 15-20 minutes until cooked through and the water has dried.
- Return to preliminary preparation, point 3.
Broccoli:
- Place the broccoli florets in a colander, add a little salt and place them in the rice cooker to steam.
- Do not cover the pan, so that the broccoli retains its green color.
- When the broccoli is cooked and al dente, remove the strainer and set it aside.
Almonds:
- While the rice and broccoli are cooking, coat a pan (into which you can then add the rice) with a drizzle of oil and place it over medium heat, add the flaked almonds and brown.
- During the process, mix so that they brown evenly.
- Remove the almonds and set them aside on a serving plate.
Golden Garlic:
- In the same pan, add a little more olive oil and, over medium-low heat, sauté the chopped garlic until golden, do not let it burn, otherwise it will become bitter.
- Add the broccoli to the pan, stir and sauté for 1 minute.
- Add the toasted almonds, mix again and turn off the heat.
Christmas rice:
- In the pan containing the garlic, broccoli and almonds: add the cooked rice, mix well.
- If necessary add a little more olive oil.
- Mix again.
FINALIZATION AND ASSEMBLY:
- Serve with meat, poultry and fish – it pairs well with a variety of dinner dishes.
- Serve the Christmas rice on a serving plate, or if you prefer, directly on the plates, together with the main course(s).
