Find out how to make the traditional cod fritter in the Airfryer, with less fat and the same delicious flavour. A healthy and practical option for this Portuguese classic.

Recipe for 2 people.

1 cutting board(s), 2 bowls, 1 potato masher (or strainer), 2 pan(s), 1 frying pan(es), 1 grater (optional)

cup = 240 ml, spoon = 15 ml, teaspoon = 10 ml, teaspoon = 5 ml

Cod cake ingredients

– 150 g desalted cod chips (or cod chips)

– 150 g of potatoes

– 2 tablespoons of onion, grated or finely chopped

– 1 tablespoon chopped parsley

– salt to taste

– pepper to taste THE

– 2 tablespoons of beaten egg or as much as needed to make the point

Ingredients FOR BRUSHING OR SPRAYING”

– olive oil to taste

Ingredients TO ACCOMPANY:

– pepper sauce to taste (optional)

– lemon to taste, cut into quarters (optional)

– green leaves to taste (optional)

PREPARATION:

  1. The yield of this recipe is 10 cupcakes measured with 1 tablespoon per 2 servings.
  2. Desalination of cod (optional): if using cod, start desalination 6 hours before. Change the water every 2 hours, keeping the cod in the refrigerator.
  3. Start by cooking the desalted cod and the potatoes (see preparation).
  4. Wash, peel and grate or chop the onion very finely.
  5. Wash, dry and chop the parsley. Set aside wrapped in paper towels to avoid excess moisture.
  6. Set aside the other utensils and ingredients for the recipe.

PREPARATION:

Cod – Cooking: (do this step during pre-preparation)

  1. Put water to boil in a pan.
  2. Once boiling, add the cod and bring back to the boil.
  3. Turn off the heat and let it cool in a covered pan.
  4. Next, cook the potatoes.

Potatoes – Cooking (do this step during pre-preparation)

  1. Wash, peel and cut the potatoes into medium cubes.
  2. Cook in another pan with water and salt until soft (about 15 minutes).
  3. Go back to pre-preparation – point 4.

Code – continuity:

  1. Drain and chop the cod:
    • Traditional Method: Place the cod in a clean cloth, close tightly and press with your hands until microthreads form.
    • Quick method: Use a food processor to shred evenly.

Potatoes: continuity:

  1. Once the potatoes are very soft, drain them and, while still hot, squeeze them or pass them through a sieve to obtain a homogeneous consistency.

Cod Cake – Sautéed Cod

  1. Heat a pan with olive oil and sauté the onion until softened.
  2. Add the cod cut into pieces and brown for 1 minute.
  3. Season with salt and black pepper to taste.
  4. Add the chopped parsley and turn off the heat. Let it cool.

Cod cake – Dough and Modeling

  1. Mix the cod stew with the squeezed potatoes, stirring until a homogeneous mass is formed.
  2. Add the beaten egg little by little, just enough to give it a firm, moldable consistency.
  3. Preheat the Airfryer to 200°C for 5 minutes while forming the ravioli:
    • Quenelle format: Use two spoons.
    • Ball shape: shape with hands lightly greased with olive oil.
  4. Freezing (optional): Cupcakes can be frozen before baking.

Cod Cake – Made in the Airfryer

  1. Spray or brush the gnocchi with olive oil to intensify the flavor and color.
  2. Place the ravioli in the Airfryer basket, without stacking them, ensuring space for air circulation. Depending on the capacity of your equipment, divide it into steps.
  3. Cook for about 15 minutes, turning 1 or 2 times over time, until golden and crispy.

FINALIZATION AND ASSEMBLY:

  1. Remove the cod fritters from the Air fryer and serve immediately.
  2. Optional serving suggestions: pepper sauce, quartered lemon and green leaf salad.
