Jawbreaker cake in a jar

Ingredients:

  • 3 eggs
  • 1 1/2 cups (tea) sugar
  • 1/2 cup (tea) of oil
  • 1 cup coconut milk (tea)
  • 1 tablespoon of baking powder
  • Margarine and wheat flour for greasing and flouring

  • 1 cup (tea) of sugar
  • 1 lemon juice
  • 4 cups of water (tea)
  • 1 cup dried coconut (chopped)

caramel decoration

  • 1 cup (tea) of sugar
  • 1/2 cup (tea) water
  • margarine for greasing

Method of preparation:

  1. For the cake, beat the eggs, sugar, oil and coconut milk in a blender.
  2. Pour into a bowl and, with a spoon or hand whisk, mix the flour and baking powder together until smooth.
  3. Pour into a buttered and floured 25cm x 35cm mold and place in the preheated medium oven for 35 minutes or until golden brown.
  4. Leave to cool and crumble the cake with your hands.
  5. For the jawbreaker, bring the sugar, lemon juice, and 3 cups (tea) water over medium heat.
  6. When it starts to brown, add the coconut and cook until golden brown. Add the remaining water, melt the caramel while stirring and turn off the heat.
  7. Let cool.
  8. For the decoration, in a pan, bring the sugar and water over medium heat.
  9. When it is golden brown, use a spoon to make drawings with the syrup on a greased stone surface.
  10. Leave to cool and harden.
  11. In individual clear jars or cups, layer the cake and cheesecake, ending with the cheesecake.
  12. Carefully remove the caramel from the stone and decorate the cups.
  13. Serve immediately or refrigerate until ready to serve.
