Ricotta and spinach pancakes: yummy for your coffee!
Performance: 5 small pancakes;
Time: 30 minutes.
Ingredients (for the dough):
- 3 eggs;
- 3 tablespoons of oatmeal;
- 1/3 cup water;
- 3 tablespoons of olive oil;
- 1 pinch of salt.
Ingredients (for the filling):
- 1 package of spinach;
- 1 ricotta (about 250 grams);
- 1 pinch of salt;
- 1 tablespoon of olive oil;
- Spices to taste (curry, black pepper, turmeric and thyme powder);
- 2 cloves of garlic.
Preparation method (for the dough):
Blend all ingredients in a blender or mixer. Then preheat a pan. Grease with a drizzle of olive oil and arrange 1/4 of the dough at a time, forming a small pancake and, when it is firm, brown it on the other side.
Method of preparation (for the filling):
Clean the spinach leaving only the leaves and the thinnest part of the stem. Reserve. In a dish, mash the ricotta and add the salt. Add other toppings of your choice. Mix well.
In a pan heat the oil, fry the garlic and add the spinach. Cook until wilted. Then season again with salt and curry. Put out the fire. Finally, add the ricotta and mix well. To assemble, place the filling on one end of the dough and roll it up tightly. And that’s it: your ricotta and spinach pancake is ready!
