INGREDIENTS:

  • ½ kg of Asterix potato (pink potato)
  • 3 tablespoons (soup) wheat flour, more for dusting.
  • 2 yolks
  • 4 tablespoons of grated Parmesan
  • salt to taste
  • freshly ground white peppercorns
  • Grated nutmeg

PRE-PREPARATION:

Simple and easy recipe of homemade dumplings:

  1. Start by cooking the potatoes, which will have to cool down (see preparation).
  2. Separate the other ingredients and utensils for the recipe.
  3. Prepare the sauce of your choice. A suggestion is the classic béchamel sauce, tomato puree. or pesto.

PREPARATION:

Potatoes – Cooking (do this step before continuing with pre-preparation):

  1. Wash, peel and cut the potatoes into large cubes.
  2. Put it in a clear plastic bag and poke holes with a fork.
  3. Put in the microwave and cook at maximum power for about 10 minutes.
  4. While they cook, add your favorite sauce.
  5. When they are cooked, mash them while they are still hot, passing them through a potato masher over a bowl.

Simple and easy homemade dumplings recipe – dough preparation:

  1. Put a pot of water on the stove to cook the gnocchi.
  2. When the potatoes have cooled, add the egg yolks, salt, pepper, nutmeg and ¾ of the amount of flour.
  3. Mix very well with a spatula.
  4. Add the grated Parmesan and incorporate.
  5. Transfer the dough to the floured counter.
  6. Knead everything, with your hands, until you get a smooth and homogeneous dough, to the point of rolling it out – if necessary, add the remaining flour to give the final point.
  7. Check seasonings, salt and pepper and adjust as needed.
  8. Flour the auxiliary pan and set it aside.
  9. Cut a portion of dough and make a roll.
  10. Cut the roll into pieces of about 2 cm and place it on the auxiliary tray, dusting it with a little flour to prevent it from sticking.
  11. Cook one or two dumplings to test and adjust if necessary – they should be whole and very soft.
  12. Repeat the process described in steps 9 and 10 (above) until the dough is finished.

Simple and easy homemade dumplings recipe – cooking:

  1. When the cooking water boils, add the salt.
  2. Using a slotted spoon, drop small portions of gnocchi into boiling water and cook until they float to the surface.
  3. Drain them with a slotted spoon, drain well and place them on a plate, wrapping them in a little sauce or olive oil to prevent them from sticking.
  4. Continue cooking the gnocchi, placing them on the plate and adding more sauce or oil to coat them.
