Ingredients:

  • 10 egg whites
  • 3 cups sugar (tea)
  • Zest from the zest of 1 lemon

Method of preparation:

  1. Beat the egg whites with a mixer at high speed and add the sugar little by little, without ceasing to beat.
  2. Add the lemon zest and continue beating until you get a thick cream.
  3. Turn off the mixer and put the cream inside a pastry bag.
  4. Drain onto a greased baking sheet lined with parchment paper and bake in the oven over low heat for 1 hour or until cooked through and lightly browned.
  5. Remove from the oven.
  6. Leave to cool before removing from the parchment paper and serving.
