Pasta ingredients:

  • 150 g of butter
  • 320 g of sugar
  • 240 g eggs (separate yolks and whites)
  • 160 g of passion fruit puree
  • 60 g of milk
  • 250 g of soft wheat flour
  • 10 g of yeast
  • 1 g of salt
  • 30 g of vegetable oil

Ingredients for the filling:

  • 215 g of passion fruit juice
  • 40 g of sugar
  • 50 g of water

Method of preparation:

In a planetary mixer, put the sugar and butter. Beat until a whitish cream is formed. Then enter the yolks and beat until a homogeneous mass is formed. Passing through a sieve, add the wheat flour and salt. Also add the passion fruit pulp, milk and vegetable oil. Beat again until a homogeneous raisin is formed. Finally add the yeast and mix gently. Transfer the dough to another container and set aside.

In the mixer, add the egg whites and beat until stiff. Now, little by little, incorporate the egg whites into the mixture, mixing gently with a spatula from bottom to top. This technique will take care of aerating the dough and making the cake even fluffier.

Transfer the dough into a buttered and floured mold and bake in a preheated oven at 180°C for about 20 minutes. Once the time has elapsed, remove the mold from the oven, wait for it to cool down and unmold. You may still enjoy the cake, but you can flavor the recipe with a syrup if you prefer.
