- 3 peeled and grated chayotes
- 2 eggs
- 50 g of grated Parmesan
- 1 pinch of grated nutmeg

- Fry oil
Method of preparation:
- In a bowl, mix all the ingredients.
- Using 2 soup spoons, fry the gnocchi in hot oil, a little at a time, until golden brown.

- 3 chayotes
- salt to taste
- 1 cup Parmesan (grated)
Filling
- 2 tablespoons of olive oil
- 1 chopped onion
- 3 cups cooked and shredded chicken
- 1 cup of chopped green olives
- Salt and chopped parsley to taste
Method of preparation:
- For the filling, heat a pan with olive oil and fry the onion until wilted.
- Add the chicken, olives, salt and green flavoring and brown for 5 minutes.
- Turn off the heat, mix with the ricotta and reserve.
- Cut the chayote in half lengthwise and cook for 3 minutes in boiling salted water.
- Remove from the oven, leave to cool and remove the pulp with a spoon, forming small dumplings.
- Finely chop the pulp and mix with the reserved filling.
- Divide the filling among the chayote canoes and place them in a mold, side by side.
- Sprinkle with Parmesan and bake in a preheated medium oven for 20 minutes or until golden brown.

- 3 tablets of fresh brewer’s yeast (45g)
- 2 tablespoons of sugar
- 1 tablespoon of salt
- 2 cups water (warm)
- 1 cup of oil (tea)
- 50 g of grated Parmesan
- 1 egg
- 1 kg of wheat flour
- 2 egg yolks for brushing
Filling
- 3 tablespoons of olive oil
- 1 chopped onion
- 2 chopped tomatoes
- 3 diced chayote
- 1 cup olives (chopped)
- Salt and black pepper to taste
- 400 g of grated white cheese
Method of preparation:
- Cook the oil with the onion for 5 minutes.
- Add tomatoes, chayote, olives, salt, pepper and simmer for 10 minutes.
- If needed, add 1/2 cup (tea) water.
- Leave to cool, mix in the cheese and set aside.
- Mix the yeast, sugar and salt until it turns into a liquid.
- Add the water, the oil, the cheese, the egg and gradually add the flour until it comes off your hands.
- Knead the dough and make balls.
- Leave to rise for 20 minutes.
- Open each ball, put the filling and close forming triangles.
- Place on a greased and floured baking sheet, brush with egg yolks and bake in a preheated medium oven for 30 minutes or until golden brown.
- Serve immediately.

- 4 tablespoons of pork lard
- 2 pieces of sliced ​​pair
- 1 diced onion
- 2 crushed garlic cloves
- 4 diced chuchus
- 1 liter of water
- salt to taste
- 2 cups cabbage (sliced)
- olive oil for dressing
Method of preparation:
- In a frying pan, heat the oil over medium heat and saute the pair, onion and garlic for 5 minutes, stirring occasionally.
- Remove the pair, set aside and in the same pan put the chayote, vegetable stock and water and cook until softened.
- Blend the chayote with the cooking water in a blender.
- Return the beaten chayote to the pan and add the pair, cabbage and season with salt.
- Cook for another 3 minutes.

- 1/2 cup cherry tomatoes (halved)

- 4 beaten eggs
- 1/3 cup milk (tea)
- 1 pinch of chemical yeast
- olive oil for greasing
Method of preparation:
- In a bowl, mix the chayote, ham, cheese and tomato.
- Season with salt, pepper, green perfume and olive oil.
- In another bowl, mix the eggs, milk, flour and baking powder with a wire whisk.
- Season with salt and stir until smooth.
- Add to the previous mixture and mix. Heat a medium greased non-stick skillet over medium heat and add the mixture.
- Leave to harden, cooking for 4 minutes.
- With the help of a plate, turn the omelette and put it back in the pan.
