Escondidinho, only with minced meat, easier than any other and just as delicious

Minced meat escondidinho, a puree with cheese and minced meat, well seasoned and braised, to compose an easy and very tasty dish, the simplest of escondidinhos!!

INGREDIENTS. *click to see the shopping list

Minced meat filling for Escondidinho:

  • 350 g of minced meat
  • oil
  • ½ onion(s) chopped
  • 2 minced garlic cloves
  • 1 chili pepper, deseeded, chopped
  • 1 cambuci pepper, cut into thin strips (optional)
  • ½ glass of dry white wine
  • ½ can diced peeled tomatoes, with juice
  • salt and pepper

Mashed potatoes with cheese:

  • 450 g potatoes, peeled and cut into thick slices
  • 4 tablespoons of butter
  • 1 cup of milk (tea)
  • 80 g of grated mozzarella (thick)
  • salt

Sauteed Broccoli:

  • 150 g of frozen broccoli
  • 2 minced garlic cloves
  • oil
  • salt
  • Pepper

Ride:

  • Butter, to grease the refractory(s).

Finally (the hidden one):

  • ½ tablespoon of breadcrumbs
  • ½ tablespoon of grated Parmesan

Go with:

  • parmesan (optional)

PRE-PREPARATION:

  1. Separate all ingredients and utensils (including the refractories in which you will assemble the recipe).
  2. Start by preparing the puree (see preparation).
  3. Wash, mince and cut the other ingredients.
  4. Grate the mozzarella and Parmesan (optional) if you haven’t bought them already grated.
  5. Preheat the oven to 250ºC.
  6. Remove the broccoli from the freezer. Boil a pot of water to cook the broccoli.

PREPARATION:

Mashed Potatoes with Cheese (Baked Potatoes) (do this step before you start the pre-prep):

  1. Peel the potatoes and cut them into thick slices. This step is optional, as the potatoes can also be cooked whole, in their skins and then squeezed.
  2. In the pan with still cold water, put the salt, add the potatoes and cook until soft (about 20 minutes). This step can be done in the microwave, piercing the skin of the potatoes and cooking them for about 10 minutes, possibly increasing the time.
  3. Continue pre-preparation.

Minced meat filling for Escondidinho:

  1. In another skillet, over medium-high heat, saute the onion, garlic, and red pepper flakes in the olive oil until the onion is translucent.
  2. Add the cambuci pepper (optional) and brown.
  3. Add the ground beef and continue cooking until the liquid that has formed in the pan is reduced.
  4. Drizzle with the wine and keep over high heat until all the alcohol has evaporated.
  5. Add the tomato cubes with the juice.
  6. Season with salt and pepper.
  7. Lower the heat and cook for about 10 minutes to blend the flavours, leaving the stew moist, but without broth.
  8. Reserve.

Mashed potatoes with cheese:

  1. When the potatoes are cooked and soft, drain them.
  2. While still hot, pass the potatoes through a juicer or through a fine sieve.
  3. Put it back in the pan, add the butter, beating with a wire whisk until you get a lump-free puree.
  4. Bring the puree to the boil and add the milk, stirring constantly.
  5. Add the mozzarella and, stirring constantly, cook until the cheese melts (use a wire whisk if you prefer) and the puree detaches from the pan.
  6. If necessary, add a little more milk to make it creamy.
  7. Rectify the salt and reserve in the pan itself.

Ground Beef Escondidinho (assembly):

  1. Combine a tall refractory form with butter.
  2. Put the braised meat first and arrange.
  3. Cover with the puree, leaving the surface smooth.
  4. In a bowl mix the breadcrumbs with the grated Parmesan and sprinkle with the puree.
  5. Place in the oven to heat and brown. It must have a golden surface (estimated time from 5 to 10 minutes, may vary depending on the oven).
  6. Meanwhile prepare the broccoli.

Sauteed Broccoli:

  1. With the boiling water, add the salt and the broccoli.
  2. When it boils again, cook the broccoli for another 2 minutes.
  3. Run and book.
  4. Reserve the unwashed pan for sautéing the broccoli.
  5. In the same pan you cooked the broccoli in, saute the garlic in the olive oil until lightly browned.
  6. Add the broccoli and saute again.
  7. Season with salt and pepper.

FINISHING AND ASSEMBLY:

  1. When the hidden minced meat it is gilded, taken out of the oven and brought to the table in the refractory(s).
  2. Arrange the broccoli on a plate and serve separately.
  3. If desired, add a little more grated Parmesan over the escondidinho.
