Chia flour savory muffin recipe

dough ingredients

  • 200 g of oat bran
  • 2 tablespoons of chia flour
  • 2 whole eggs
  • 2 tablespoons of olive oil
  • 1 courgette

stuffing ingredients

  • 200 g of semi-cured Minas cheese, cubed
  • 100 g of chopped tomatoes
  • 1 can of peeled tomatoes
  • Olive oil to taste
  • A little bit of salt
  • oregano to taste

Method of preparation

Grate the courgettes and put a pinch of salt to release the water. Let stand for 5 minutes and drain the water. Reserve.

Mix the oatmeal, chia flour, eggs, olive oil and zucchini together. Let it rest for half an hour. Preheat the oven to 200ºC.

In a bowl, mix the ingredients for the filling. Reserve.
