Chickpea Low Carb Quiche Base/Dough:
- 1 1/2 cups pre-cooked chickpeas
- 1 tablespoon of dried oregano
- 1 tablespoon lemon juice (juice)
- ½ spoon (coffee) of salt
- ¼ cup olive oil (tea)
- oil to grease the mould/s

PRE-PREPARATION:
- Preheat the oven to 210°C
- Separate recipe ingredients and utensils.
- Coat the removable bottom shape(s) with coconut oil. Prefer individual ones, which allow you to complete the recipe faster. Depending on the size of the mold, keep in mind that oven times may vary. Testing for this recipe was done in a 15cm removable ring.
PREPARATION:
Chickpea Low Carb Quiche Dough:
- In a blender, food processor or mixer, place the pre-cooked chickpeas (without broth), lemon juice, salt, oregano (optional), and olive oil.
- Beat until you get a thick paste.
- Distribute the dough into the greased removable-bottom mold, shaping the sides with the help of a spoon, trying to leave it at the same height (leave at least 2 cm of height on the sides).
- Poke shallow holes in the dough with a fork.
- Place in preheated oven and bake for 10-15 minutes or until set.
- Remove from the oven and set aside.
- Lower the oven temperature to 180ºC and keep it on.

- After assembling, put the QUICHE back in the preheated oven (temperature 180ºC). Estimated time is 20-25 minutes or until cooked through and lightly browned.
Low Carb Chickpea Quiche
- Remove the cake from the oven, let it cool slightly.
FINISHING AND ASSEMBLY:
- unmold low carb chickpea quiche.
- Serve hot, whole or sliced, distributing on plates.
- Accompany with salad of seasoned leaves (optional) or with other accompaniments of your choice.
