Ingredients:
- 1 tail of beef (at least 1.5 kg)
- 1 beef tongue (at least 1 kg)
- 2 bay leaves
- 2 medium tomatoes
- 2 onions
- 2 medium carrots
- 2 potatoes
- 5 crushed garlic cloves
- salt, paprika, chimichurri and black pepper to taste
How to make the Greek kiss recipe:
- Cook the tongue in the pressure cooker with two bay leaves for about 30 minutes.
- Meanwhile, cut the tail into medium-sized pieces and trim off any excess fat if necessary.
- Season the tail with salt, pepper, paprika and chimichurri. Then let it marinate.
- Cut the onions, carrots, potatoes and tomatoes into thick cubes. Reserve.
- In a large frying pan, brown the oxtail evenly with a drizzle of olive oil. Reserve in another container.
- In the same pan, fry all the previously cut vegetables with the crushed garlic cloves.
- When the color of the vegetables becomes slightly more lively, add the wine and cook over low heat.
- Remove the tongue from the pressure cooker and immerse it in a bowl of ice water and ice. With heat shock, it will be easier for you to “peel out” your tongue.
- Then cut the tongue into thick slices.
- In the pressure cooker put the pieces of tail and tongue.
- Pass the vegetable broth through a sieve and add only the liquid part to the pressure cooker. Reserve the vegetables.
- In the pressure cooker, control the amounts of seasoning to taste.
- Cover the meat with water and leave it under pressure for about 40 minutes.
- After pressing, remove the sauce from the meat and puree it in a blender with the previously reserved vegetables.
- Serve the meat watered with sauce on a transparent plate and enjoy!
