Homemade Pie Recipe Ingredients For The Base Dough:

  • 200 g of butter + a little to grease the mould
  • 2 cups sugar (tea)
  • 4 eggs, egg whites and yolks separated.
  • 1 cup (tea) of milk (optional) – in some variations it is replaced by another ingredient
  • 3 cups (tea) of wheat flour + a little for sprinkling the mold
  • salt (pinch)
  • 1 tablespoon of chemical yeast

Ingredients Lemon Cake (Homemade Cake – variant 1)

  • 1 lemon (juice and zest) – – add the juice to the milk for the dough and the zest at the end of the preparation before incorporating the yeast

Ingredients Vanilla Cake (Homemade Cake – variant 2)

  • ½ spoon (coffee) of vanilla essence added to the base dough

Ingredients Orange cake (homemade cake – variation 3)

  • 1 cup orange juice (replaces milk in base dough)
  • Orange (zest), added at the end, before fermentation

Ingredients Fruit juice cake (homemade cake – variation 4)

  • 1 glass of concentrated fruit juice of your choice (replaces milk) added to the base dough

Ingredients for coconut cake (homemade cake – variation 5)

  • ½ cup milk (new amount instead of original base dough amount)
  • 100ml coconut milk, added to base dough

Ingredients for the marble cake (homemade cake – variation 6)

  • 2 tablespoons cocoa powder (added halfway through the dough)
  • ½ lemon zest *, added to the other half of the dough

Ingredients Cheese cake (Homemade cake variation 7)

  • 100 g of grated standard Minas cheese, add at the end of the preparation of the base dough, before cooking

Ingredients Guava Cake (homemade cake – variation 8)

  • 250g guava smear, diced or as much as you like
  • Flour to taste (to flour the guava cubes)

Ingredients Chocolate Cake (Homemade Cake – variation 9)

  • 1 cup cocoa powder (added to base dough)
  • 1 lemon (juice), added to milk

PRE-PREPARATION:

  1. Remove the butter from the fridge 1 hour beforehand to bring it to room temperature.
  2. Separate all ingredients and utensils for the recipe, with the respective variation chosen.
  3. To make a standard recipe adjust the quantities for 4 people and use a 23cm mold with a hole in the centre.
  4. In two bowls, separate the yolks and whites.
  5. Sift the wheat flour.
  6. Combine a form with butter and sprinkle with flour.
  7. Preheat the oven to 180°C.

PREPARATION:

Homemade cake:

  1. Check out the version of the cake you are about to prepare. In some of them the milk should be replaced, check the ingredients.
  2. If your butter is not at the point of ointment, beat with the wire whisk until soft, only then continue, adding the sugar, beating until a whitish cream is obtained.
  3. Add the egg yolks, one at a time, and continue beating to incorporate.
  4. Turn off the mixer and wash the whisk.
  5. With a spatula or a wire whisk, gradually add the flour and the milk or its substitutes (depending on the recipe variant), beating until a smooth cream is obtained.
  6. In another bowl, in a mixer, beat the egg whites with a pinch of salt until they form peaks (snow).
  7. Note other ingredients that should be added to the base dough depending on the variation.
  8. Finally, before the egg whites, add the yeast to the dough.
  9. Then incorporate the egg whites, with circular movements, from the center outwards, being careful to keep the mass airy.
  10. If you are preparing the marbled version, divide the dough into two parts. Add the lemon zest to one half and the chocolate powder to the other half. Only then, place each one in the mold and mix lightly with a spatula just to “join” the masses, without mixing.
  11. In the guava cake version, first place half of the dough in the mold, flour it and arrange the cubes of guava paste, then cover with the other half of the dough.
  12. In the other versions, transfer the dough into the already buttered and floured mould.
  13. Place in a preheated oven at 180°C and cook for about 45 minutes.

Homemade cake:

  1. To see if the cake is cooked, do the toothpick test: insert it in the center of the cake and if it comes out clean, it’s ready.
  2. Remove from the oven, swirl the pan lightly to see if the cake falls apart.
  3. Let cool.

FINISHING AND ASSEMBLY:
